I planted some mint this year and it is taking over my garden. I'm getting tired of Mojitos =) Unfortunately, I'm not sure how to use it in cooking. Any suggestions would be greatly appreciated!

What are Mojitos?
Nanaimo bars are a good idea for mint (extract anyways) I am not sure how to do the extraction though.

Mojitos are drinks:
3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
I'm going to do a search for Nanaimo bars and see how they are made.. thx

I planted some mint this year and it is taking over my garden.Old thread, but an interesting topic since everyone seems interested in growing their own herbs. Mint is very invasive and MUST be grown in a pot or, as stated, it will take over your yard and very hard to get rid of.
Here's a good recipe, but you have to know how to "can".
MINT JELLY
1 ½ cups white grape juice (http://www.essortment.com/all/mintrecipes_rylo.htm#)
½ cup water
3 ½ cups sugar
3/4 cup fresh mint leaves, crushed
green food coloring
1-3 ounce package liquid pectin
Combine all of the ingredients; except pectin in a large saucepan (http://www.essortment.com/all/mintrecipes_rylo.htm#). Bring to a rolling boil; stirring constantly. Cook 1 minute, add pectin and bring to a full rolling boil again. Boil 1 minute, stirring frequently. Remove from heat, and skim off the foam with a metal spoon.
Quickly pour the hot jelly through a sieve into the hot jars, leaving 1/4 inch of headspace; be sure that you wipe off the rims of your jars. Cover at once with lids. Process for 5 minutes in a boiling water bath. Makes 4 half pints.

I know a recipe for delicious Chocolate Mint Sticks, something that my sister cookes almost every month...
Ingredients:
1 cup butter, softened
2 cup granulated sugar
4 eggs
2 tsp vanilla
4 oz unsweetened chocolate, melted
1 cup unsifted all-purpose flour
3/4 cup chopped pecans or walnuts
2 cup confectioners' sugar
4 tbl butter or margarine, softened
2 tbl Milk
1/2 tsp peppermint extract
1 x -2 drops green food coloring, if desired
2 oz sweetened chocolate
2 tbl butter or margarine
Method :
Preparation Time: 25 minutes
Cooking Time: 30 minutes
1. Heat oven to 350 degrees. Grease a 13-by-9-inch baking pan.
2. With an electric mixer, cream the butter, granulated sugar, eggs and vanilla until light, 2 minutes. Add the chocolate and mix well.
Stop the mixer and fold in the flour then the nuts.
3. Transfer batter to prepared pan. Bake just until a toothpick inserted in the center comes out clean, 30 minutes. Cool completely.
4. For the filling, mix all ingredients until smooth. Spread in an even layer over the cooled brownies.
5. For the glaze, melt chocolate with butter; mix well. Pour over filling and gently tilt pan so glaze covers the entire surface.
Refrigerate until glaze is set; cut into squares or sticks. For holiday cookie trays, cut the brownies into small squares and decorate them with holiday finery.
