I was actually thinking of lettuce because you can use it cooked or uncooked (with salads), or maybe onions. What do you guys think is the most versatile?

Tough question. Probably onions.
Raw, sauteed, grilled whole or baked with butter and beef granules, breaded and fried, accompaniment on burgers, tacos, salads, in sauces. green onions on baked potatoes... oh, and let's not forget those little pearl onions in vodka gibsons :^)
While it's not my favorite vegetable, it's probably the most used.

Onions or potatoes. Potatoes are very versatile. They can be a side dish, a whole meal, and they can be an ingredient in other recipes such as bread or other doughs. I think you could live quite a long while on just potatoes. I am not so sure about onions. Though I do love them in oh so many ways.

Good point about potatoes being a meal in themselves... but you don't typically eat them raw like you do onions... although there is potato vodka, so that's gotta be worth a few points... :p
lol ;)

And let's not forget the potato gun! Although onions have inspired "onion goggles". We'll call that one a draw ;)

Yeah I actually agree with potatoes being a meal in themselves, I didn't think about that. Hmm..

I agree with onions, also celery, potato (although true that you can't eat them raw) and carrots maybe. I love broccoli the most though and eat that raw or cooked!!
