Next time you feel the urge to reach for a bottle of salsa, don't. Making it fresh from scratch is so much better--and yummier!

In a medium bowl, combine 1 1/2 cups chopped tomatoes, 1/4 cup chopped fresh jalapeņos, 1/4 cup chopped red onions, 1/8 cup chopped cilantro or parsley, and 1/2 cup feta cubes; mix. Pour in 2 tablespoons olive oil and 1 tablespoon balsamic vinegar, and season with salt and pepper; toss. Sprinkle with grated Parmesan cheese before serving. Serve with crackers, chips, or your choice of dippers.

Serves 6.
