This is one of my favourite cheese cake recipes... It's called "Cottage Cheese Cake". You can find Lancewood Smoth Cottage Cheese at most local supermarkets.
INGREDIENTS:
Crust
· 225g tennis biscuits crumbed
· 4 Tbls melted margarine or butter
Filling
· 500g Lancewood Smooth Cottage Cheese
· 1 cup Lancewood Crème Fraîche (soured cream)
· 100g sugar
· 2 eggs, beaten
· 1 tsp vanilla
· 2 Tbls flour
Topping
· 1 cup Lancewood Crème Fraîche (soured cream)
· 2 Tbls sugar
· 1 tsp vanilla
· Cherries or mint leaves
METHOD:
Crust: Mix the biscuit crumbs and margarine together and pat firmly into a spring pan. Place in refrigerator to chill.
Filling: Mix the ingredients and beat well. Carefully pour over the crust and bake in oven at 180°C for 20mins. Remove from oven and turn the heat up to 220° C. Mix the ingredients for the topping and spread carefully over the cheesecake. Return to the hot oven for 5 mins. Remove from the oven and allow to cool (topping sets as it cools). Decorate with strawberry halves and whipped cream use mint leaves around base.

Name: coconut chocolate cheesecake
Ingredients:
1 coup Grham Cracker Crumbs
3 tbls Sugar
3 tbls Margarine
2 oz Unsweetened Baking Chocolate
3 tbls Margarine
16 oz Cream Cheese
1 1/4 coup Sugar
1/4 ts Salt
5 ea Large Eggs
1 1/3 coup Flaked Coconut (3.5 oz Can)
1 coup Sour Cream
2 tbls Sugar
2 tb Brandy
Method:
Combine crumbs, sugar and margarine; press onto bottom of 9-inch spring- form pan. Bake at 170 degrees Celsius, 15 minutes. Melt chocolate and margarine over low heat; stirring until smooth. Combine cream cheese, sugar and salt; mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate mixture and coconut; pour over crust.
Bake at 180 degrees Celsius, 55 to 60 minutes or until set. Combine sour cream, sugar and brandy; spread over cheesecake. Bake at 150 degrees Celsius, 5 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.

My wife bakes cheese cakes from time to time but i never saw how she does it. Maybe i will try them myself and surprise her (or maybe not, it depends on how it all goes..)
