View Full Version : Easy Salmon Patties

1-16 ounce can salmon
1/2 cup chopped green onions
1/4 cup chopped parsley
1 cup bread crumbs
2 eggs beaten
1 teaspoon prepared mustard
2 tablespoons lemon juice
cooking oil
Drain and flake salmon, reserve 1/3 cup of liquid
Combine salmon with the onions, parsley, and bread crumbs
Add the beaten eggs, mustard, lemon juice, and reserved salmon liquid
Form into patties, you should get 6 medium or 4 large
Fry patties in oil over medium heat until browned on both sides
These are also good on hamburger buns

I made Thai salmon patties tonight... I see from your pictures I used too much oil.
Canned salmon is great stuff.

And I thought I used too much oil, Kimchee. I used my nickel plated CI saute pan and probably could have used slightly less...
This was my first experience with canned salmon. It is great stuff. I had no idea what to expect when I opened the can, I thought it would look like tuna fish and was surprised they actually cut and stuff part of the fish in the can, lol.
Yeah, I'll be making this again.

My better half makes Salmon Patties but we substitute the breadcrumbs for mashed potato. Also we omit the mustard. When the patties are formed we coat them in flour, egg and bread crumbs and shallow fry in oil. One of my favorites.
You can also substitute the salmon for Tuna.
They are then served with wedges of lemon, mashed potatoes, steamed carrots and green peas.
Next time we make them I will post a pic

I'm going to get some canned salmon Sunday afternoon when I take som friends shopping and make these one day next week!!

Chow - your pics of the patties look like mine. I am glad you liked them. I love these. They are so easy and so delicious. Since I am worried about weight gain at my age I no longer put them on buns. I just eat with some roasted veggies and/or a salad. I use lots of lemon juice on them too.
When I can get wild caught Alaskan salmon here (June-September) I roast the salmon and then use some of it to make these patties, instead of the canned. Now those are sublime. But in the winter when I can't get wild caught the canned is quite good.

I looked at a can of salmon today, the same kind I had boughten. The town grocer wanted close to 3 bucks more / can than I had paid. Unbelievable. This is an item I'm going to either buy at wally world or on sale, but not spur of the moment.
