Throw a can of baked beans into a casserole. Place a thick-cut pork chop on top, slather it with Dijon mutard. Then add a slice of sweet onion and a slice of lemon. Sprinkle over with pepper.
Bake covered at 400 degrees for 30 minutes. Take the cover off and bake 10 more minutes. Adjust times if the chop is not very thick, otherwise the pork gets too dry. At least it would for me.
Serve with a simple salad and a glass of Chardonnay.
