This is good on a grilled steak, and it's one of my go-to recipes that I've been using for years.

1 T butter
1 T vegetable oil
1/2 onion, chopped
1 small (or large) carton button mushrooms, quartered
2 tsp garlic, minced
1 small bottle red wine (187 mil)
1 tsp brown gravy mix
1 beef bouillon cube
3/4 T ketchup
1/2 stick sliced, frozen butter
chopped parsley for garnish

Melt butter and oil. When hot, add onion, mushrooms, and garlic. Cook down about 10 minutes, but do not brown. Add wine, gravy mix, bouillon, ketchup and boil until slightly thickened. Pour the juices from steaks into the sauce. Just before serving add the frozen butter and stir just until the butter is melted. This makes enough sauce for 4 steaks.

Note: Sometimes I'll put this together up to the "boil until slightly thickened" stage and let the mushrooms soak up the flavors for a while.

It's a slow melt and an emulsifier when it's frozen.......or something like that. lol You don't stir it you swirl it.

Right on! It helps it thicken right before it goes on the steak.

I had to go look it up.

Mounting - A technique where small pieces of cold, unsalted butter are whisked into a sauce just before serving. Mounting gives sauces texture and flavor as well as a glossy look.

Interesting. I'll have to give that a try next time I make a sauce that will lend itself to that technique.
Right now the only thing I mount is.... my cell phone to my computer. You thought I was gonna say something else, didn't you? ;^)
