View Full Version : Blondies
1 cup of butter (2 sticks), melted
2 cups of light brown sugar, firmly packed
2 teaspoons of baking powder
1/4 teaspoon of salt
1 teaspoon of vanilla
2 cups of all-purpose flour
2 eggs
1 cup of semi-sweet chocolate chips
1 cup of chopped pecans, chopped
Preheat oven to 350 degrees F. Butter a 9 x 13 baking dish, set aside.
In a large bowl, dissolve the brown sugar in the melted butter. Stir in the baking powder, salt and vanilla.
Stir in the flour.
Mix in the eggs, chocolate chips and nuts.
Pour into the prepared pan. Bake 25 to 30 minutes. Cool before cutting. If you have enough willpower, these are best if you can let them sit in the pan overnight before cutting.

There is no way I could let those sit overnight.

Apparently, it would appear that you have no willpower. Ha!!
Thanks for the recipe, Mama!!
Y'all are welcome!
Chow, you could cut one out of the corner and let the rest sit overnight...lol
If you decide to give them a try, I'd love to hear your review!

I agree, I think they would do well to make through getting cool, much less overnight. I want to make these they look good and I love Blondies. Warm with a scoop of Vanilla Ice Cream. Mmmmm sounds good.

I might make those tomorrow!
Something to do. I think I have all the ingredients to do it.
And now for the willpower to be mustered up to leave them alone overnight. Ha!!

No not yet.
Since they must sit overnight before being cut, i might do them tonight before I go to bed. That way, I'm not tempted to try them out until morning.
Was it a square dish or pan that you used, and did you mix the batter by hand?
It was a 9 x 13 glass baking dish. I mixed the batter by hand. I have step by step pictures here: Blondies, step-by-step with pictures (http://www.mamas-southern-cooking.com/blondie-recipe.html).

Thank you, Mama!
I saved it into my website folder.
Just gotta finf the chocolate chips. They're buried in the fridge somewhere because I saw them in there.
I got everyting else. When it's done, I'll post a pic of the finished product.

Looks good but I would probably leave out the peacans, I am just not a nut fan, which I were for some of the health benefits from certain types.
You can leave out the nuts if you want...I won't send out the food police...lol

Mama, I'm about to do your recipe.
I found the chocolate chips and chopped nuts in the freezer. in the freezer.
I'll make some brown sugar and get going on it.
Great! Let me know what you think! Pictures would be nice if you can.

I DO plan to post some pics when it's done.
One thing though;
The batter seemed rather stiff. I tweaked it a bit by adding a little bit of milk at a time until it was where I wanted it to be - almost to the consistency of banana bread batter.
The pics on your website show the batter at the consistency of cake batter. Anyway, it's in the oven now.
I set the timer on the microwave for 30 minutes.
It's a fairly thick batter, you have to spread it around the pan. I don't know what the milk will do to the recipe since it doesn't call for milk...might work though. Did you fluff up your flour before you measured it? I don't sift mine but I do fluff it up to aerate it before I measure it.

I sifted the flour after it was measured, pouring it right into the sifter.

Here it is, fresh from the oven!!
Sorry. I don't have any willpower either! I sneaked a little dry corner out of it. Had to see what it tastes like, and it is GOOD!!
Looks great! Are you going to dive right in or let them sit overnight...lol.

Had a little dry corner of it already.
Couldn't wait. The rest, I'll wait for. It should be set by late tonight or so.
It's smelling all through the house!! No wonder I had no willpower to refain from tasting it!

And BTW, I used the mixer to mix the batter, added the chopped nuts and folded the chocolate chips in by hand.
I'm a lefty, and my left hand was getting cramps mixing the molasses into the sugar to make brown sugar. So I decided to cheat and use the mixer instead.

It looks like your oven needs leveled, or is that an optical delusion that one side of the batter is higher than the other? ;^)
So let's see one cut apart tomorrow. They look good in that pic.

Thanks.
The oven IS slightly unlevel because the floor itself is unlevel. I probably didn't spread the batter even enough.
But I don't think I'll be arrested by the food police.
That's the way that these old buldings are in East Boston.

Floors settle anyway. My oven was level before winter, but lately I notice the butter heading towards the back of the pan when I melt some.

The oven is off by about 25 degrees as well. Have to set it 25 degrees higher to compensate for the temp lost.

Here they are;
The Blondies.
Looks and tastes more like a cake than brownies.
Hmmm...that's strange. Maybe it was the milk?
