I went food shopping today and saw some water chestnuts in the vegtable section. Does anyone know what kind of dishes they would go in? How are they different from plain chest nuts? Any recipes?

Oh yes, Liketobake, they are Great in Stir-Fries salads, and anything you want a bit of crunch in. they don't have much flavor so they will take on what ever you use as seasoning or sauce. Let me look at my recipes and see what I have.

Beef with Bamboo Shoots and Snow Peas
Greatest Ever – Wok & Stir-Fry
Servings 4 Page 78
Ingredients
12 ounces round steak
3 tablespoons dark soy sauce
1 tablespoon tomato catsup
2 garlic cloves, minced
1 tablespoon fresh lemon juice
1 teaspoon ground coriander
2 tablespoons vegetable oil
6 ounces snow peas
7 ounces canned bamboo shoots, drained and rinsed, or water chestnuts, sliced
1 teaspoon sesame oil
1. Thinly slice the meat and place in a non metallic dish together with the dark soy sauce, tomato catsup, garlic, lemon juice, and ground coriander. Mix well so that all of the meat is coated in the marinade, cover, and let us stand for at least 1 hour.
2. Heat the vegetable oil in a preheated wok. Drain the slices of meat, add to the wok, and cook for 2 to 3 minutes (depending on how well cooked you like your meat), or until cooked through.
3. Add the snow peas and bamboo shoots to the mixture in the wok and cook over high heat, tossing frequently, for an additional 5 minutes.
4. Drizzle with the sesame oil and toss well to mix. Transfer to serving dishes and serve hot.

I like to make my own stir fry. I will try to come as close as possible to the amounts as I can for each item.
1 boneless skinless chicken breast, cut into bite size pieces
1/2 cup broccoli florets, cut into bite size pieces
1 can sliced water chestnuts, drained
1/2 cup yellow onion, sliced
1 clove garlic, minced
1/2 cup cauliflower, cut into bite sized pieces
1/4 cup bean sprouts
1/2 cup broccoli slaw mix
1 cup shredded cabbage (you can use more of this in place of the broccoli slaw if you can't find it)
then add what ever sauce you like, I like the san J brand stir fry sauce, or szechuan sauce.
I start with the wok over medium high heat. Add a little water (approximately a 1/4 to 1/2 cup) Keeping water handy in case the wok starts to get too dry. Add the onion, let it simmer for about 1-2 minutes then add the broccoli, and simmer for another minute or two then add the cauliflower, and the broccoli slaw, and or cabbage, and garlic; stir well. Once you get the veggies to the desired doneness remove them from the wok.
Add a couple tablespoons of olive oil to the wok, add chicken and stir fry until no longer pink. Add water chestnuts, and the rest of the veggies back to the wok. Add your favorite sauce, and stir to coat and heat.
I sometimes will use some angel Hair pasta in this recipe, or will serve it with steamed rice.

That sounds GOOD, thanks ! I also find myself munching on water chestnuts as a snack. I love the teXture, crunch and taste. ok wierd, but....

I tried the Beef with Bamboo Shoots and Snow Peas tonight ( although I substituted frozen peas for snow peas ( I had them in the fridge) Delightfull recipe, thanks!
And of course I added more water chestnuts. :) I also added a handfull of raw peanuts.
