Hello Everyone,
I just joined this forum just a few minutes ago. I am checking around to see if there is interest out there in Asian Cooking.
My cookbook "Shortcuts to Asian Cooking" Is available now at Barnesandnoble.com , amazon.com and alot of other online bookstores.
I am trying to get sense of what the general public wants as far as Asian cooking.

I would like some spring roll and egg roll reciepes please. Also recipes such as ginger beef, sweet and sour pork, and rice dishes.

I get my Asian cooking at my mums or at the Chinese restaurant! The dishes I always order are barbecued pork fried rice, spring rolls wid ground beef (no shrimp inside becuz Im allergic), orange chickun, lemony fish, kung pao chickun, fried wonton, also wonton soup, and greasy noodle dish, the more unhealthy the better. :plite:

I would like to know how to cook a decent fried Rice, my son and I love fried Rice, but mine does't taste as good as the proper one, what do you put in yours and how do you make it, I love oyster sauce in mine, it tastes YUMM, also Lemon Chicken , I LOVE IT, How do you do yours, I am looking forward to new recipes, Thanks Heaps.

here is my favorite:
Delicious Fried Rice
ACTIVE TIME: 45 MIN
SERVES: 4
ingredients
3 tablespoons peanut oil
4 eggs, lightly beaten
Kosher salt and freshly ground pepper
4 thick-cut slices of bacon, sliced crosswise into 1/2-inch pieces
4 garlic cloves, minced
1 1/2 tablespoons minced fresh ginger
1 medium onion, finely chopped
2 tablespoons dry sherry
1 teaspoon sugar
6 cups cooked white rice, chilled or at room temperature
2 1/2 tablespoons oyster sauce or fish sauce
2 1/2 tablespoons soy sauce
1 teaspoon Asian sesame oil
5 scallions, thinly sliced
directions
In a large wok, heat 2 tablespoons of the peanut oil until very hot. Season the eggs with salt and pepper and pour into the wok. Scramble the eggs over high heat until just cooked through, about 1 minute. Transfer to a paper towel-lined plate.
Add the bacon to the wok and cook, stirring occasionally, until crisp, about 4 minutes. Using a slotted spoon, transfer the bacon to the plate with the eggs. Drain off the bacon grease and wipe out the wok.
Heat the remaining 1 tablespoon of peanut oil in the wok. Add the garlic and ginger and cook over high heat for 1 minute. Add the onion and cook until golden, about 3 minutes. Stir in the sherry and sugar and cook until the sherry is reduced by half, about 30 seconds. Add the rice, oyster sauce, soy sauce, sesame oil, reserved eggs, bacon and all but 2 tablespoons of the scallions. Season with salt and stir- fry until the rice is hot, about 2 minutes. Transfer to a serving bowl, sprinkle with the remaining scallions and serve.
There are may recipes. Use what you like. I think if I had any tips to offer, it would be these:
use old rice from frig not recently cooked
substitue fish sauce for soy sauce
if you add eggs, cook them first, don't try to cook them when you do the fried rice ,they will remain fluffy
use a wok keep the heat UP

Thank You so much, that sounds so YUMMY, very simular to what I do, but with a few variations, Scallions, are they like green spring onions or shallots in Aussie language, I have heard of them, but not sure, Do you also add a meat of some sort to yours, like seafood,chicken,ham,pork,or any thing else??, It sounds so nice, you could make a main meal out of it, that is what I like to do, saves on washing up, YIPPIE

Green spring onions, yes exactly. But they are not Shallots, although you could use them. I have also used baby leeks and garlic chives.
I generally add seafood. Shrimp, oysters, clams, mussels, crab. I like the taste of seafood and the rice . For me they really compliment each other. And in fact, I often make a meal of it. :)
