So I've been making hot sauces for a local taco shop that does Chipotle restaurant style foods.
I have 10lbs of serranos, 10lbs of anaheim, and 10lbs of jalapenos sitting at her shop for me to pick up this evening.
So far the Dr. Kronk & Mr. Butts brand hot sauce has three taste tested and accepted hot sauces.
There's the Serranamo!, which is made from serrano peppers and is a nice mild hot sauce.
There's the Smoked Jalapeno, Bacon & Brown Sugar Limited, which has the ingredients that the name implies and is hot as hell for just using Jalaps.
There's also the Habamato which I personally though was disgusting, but we had people offering to buy it. It's a tamato base and habaneros for a thicker, slightly tangy sauce. Despite the name, it's not as hot the SJB&BSL.
I thought it would be fun to do something different and so Dr. Kronk & Mr. Butts was formed by me and a chef type friend.
The topper on this is that the friend that owns the taco shop said that when we have perfected recipes, we could use her shop's kitchen to prepare then so that she could house the sauces and sell them.

I have a friend that just started making his own sauces, too. He makes them in another sauce shop. I don't think he's done very much as far as marketing or anything. You've got a nice outlet in that you can make them and sell them out of that taco shop.

It doesn't sound like you have a truly HOT hot sauce, though. If the one with the habaneros is not as hot as the "smoked jalapeno" you're either doing something wrong or not adding enough habanero.
Personally, I am a heat fiend. I love hot food...and I often cannot find commercial hot sauce hot enough for my tastes. There is this stuff you can get at some specialty shops called "Ultra Death Sauce" that is made from Jolakia peppers (like the second or third hottest pepper on earth)....and it is amazing, but for normal use I tend to [half] make my own.
Budweiser, believe it or not has a wing/hot sauce available in Walmart that is absolutely delicious. Typically to spice it up I will add to it two whole habaneros (seeds and all - no stem), a dash of vinegar, some cayenne pepper, some white pepper, and a tiny bit of honey....I mix these ingredients separately and emulsify them then I add the budweiser hot sauce and blend them together and pour it back into the bottle. It is extremely hot.
Its too bad regular habaneros are the hottest pepper commercially available around here.

I used 3 habaneros in the habamato and the jalapeno was much hotter. Don't ask me why, but I've had some jalapenos that can best a habanero sauce any day of the weak. These were extremely hot and I love hot stuff myself.
The local taco shop has some store bought hot sauces and one of them was a ghost pepper sauce. The guy I was hanging out with tried a tiny little bit on the tip of a tooth pick and was whining about it all day. I put a nice fat line of the stuff going across the top of my burrito and chowed down.

I made an Apple Serranamo! last week. I have to go ask the girl what she thought about it. I thought it was awesome. I wasn't thrilled at the taste of it by itself, but on some tacos it was amazing. It had a slight citrus taste and a very, very mild sweet flavor. It wasn't so hot that you needed a good glass of milk though. Very tasty.
The tacs were just chicken with lettuce and pico.
I'm going to make a habamato this week I think and then the SJB&BSL and finally I have an idea for one involving chocolate. So many ideas.
Question - Does anyone know of any containers I can use to sell these? Right now for personal storage, I'm using chinese soup carryout containers of different sizes. I figure I can sell something close to a small container for about $5 each, but the containers aren't exactly practical, especially from an application point of view. Pouring from them can get messy. I don't want to spend a crap load of money for small batches of containers, so glass might be out of the question. I'm just not sure what to use.

You might try beer and wine making supply stores. I have seen bottles and cappers in smaller sizes at my local store. Internet stores should have them also. For me a glass bottle and a nice label would be a selling point.

That's cool that you are making your own hot sauces and even thought I don't use hot sauce, I can appreciate someone making their own.

5oz glass bottle for about 50¢ each. Lids and stuff too. Looks like a decent price for glass. I might buy 50-10 and see what I come up with. The label should be the fun part. If anyone's interested in a final product, I could probably ship a couple out for cost of shipping once I finally find out how to fix them so they don't need refridgeration once sealed.
