View Full Version : Asparagus, Spinach, Bacon & Mozzarella stuffed Chicken Breast

This is an extremely easy dinner that I made one night. The only think I would do next time is substituting regular chicken breast with thin sliced or slicing them in half yourself. I find if they're rolled and cooked in the over, it's easier to over cook the thicked ones, while waiting for them to cook all the way through. I'm really careful when I cook chicken, as I can't stand dry chicken, but I also don't want undercooked chicken.

I usually pick up baby bella shrooms to throw in with the extra asparagus for an easy side.

Stuff:
Chicken breast
Mozzarella
Bacon
Spinach
Asparagus
Tooth picks
Baby portabellas (if you're planning on making a side)

Clean the chicken and lay it flat on the cutting board. Place a few spinach leaves on the inside. Layer next with bacon, asparagus spears, and then mozzarella. Roll the chicken length wise and skewer with a toothpick to hold it shut. Place it in a pan and cook.

I don't remember the exact temperature or time, but you want to cook it so the chicken is just done and not dry. I placed a few spinach leaves on top for garnish; it's not necessary.

The side is easy. Toss the remaining asparagus, mushrooms, and what the hell? Spinach! into a large pan with some oil and cook until everything is tender.

NICE! I do a side somewhat like that I use asparagus, mushrooms and fresh green beans, I saute or stir fry with butter, thyme, salt and pepper.
