2 Cornish hens
salt and pepper
1/2 teaspoon celery salt
2 Tablespoons butter
2 Tablespoons olive oil
6 tart cooking apples, peeled, cored and finely chopped
1/4 cup heavy cream

* Season the hens inside and out with salt, pepper and celery salt.
* In a heavy oven proof skillet or dutch oven add butter and oil. Brown hens on all sides.
* Remove the hens and cook apples in the remaining fat until soft.
* Place hens on the apples. Pour cream over the hens.
* Cover and place in oven. Cook for 30 minutes at 375 or until tender.

You can cook this over low heat on top of the stove. I just prefer to cook in the oven.
