dear all chefs..i'm just a newbie..
and i would like to know from you guys which one is better to pan-fried fish fillet..
is it skin first or flesh first? and a reason for the answer..
i'm sorry for my poor english..

I usually start with it skin side down. Don't know why, but I just do.

Hi SuQx and welcome to the forum! I always fry my fish skin side down first so that the skin comes out nice and crispy.

your English is fine. If you have skin on the fish usually everyone fries the fish skin side down first. if no skin. I fry the top side first and get a nice caramel color on it. then finish it on the bottom side.

I mainly eat BAKED fish as of late because it is much less fattening. Especially salmon.

I have never pan-fryed fish before, but in general when I grill or pan fry anything I always do the side that looks the best first.

They tell me that pan-fried chicken pieces should ALSO be started skin side down, but I've always done that in reverse - with the SKINLESS side down first.

but, my friend told me that if i pan fried the flesh first, it will make the fish more faster to cooked..is it true??

It is easier to cook the skin side first as it is not easy to turn salmon over when cooked. the skin helps keep it together a little better and the skin does need to be cooked. So if you start with the skin side, it will make it much easier to turn over and brown the top side. Now, you can start the fish flesh side first, but be VERY careful while turning it over as it tends to start falling apart the more cooked it gets.
I cook a lot of salmon but I don't get it with skin on, most of what is offered to me around here is skinless. So I put it top side down first, then flip to what would be the skin side when I see that it is almost half way cooked. If you don't want to turn fish over, put a lid on your pan and turn the heat down just a little, and the steam will cook the fish for you.
