Date Nut Bread
1 cup chopped, pitted dates, packed
1 cup boiling water
1 T. butter or Crisco
1 egg
3/4 cup sugar
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup chopped nuts
In a bowl add chopped dates and butter/Crisco. Pour boiling water over it to soften the dates.
In separate bowl beat together egg and sugar til creamy.
Sift together flour, baking powder and salt. Add nuts to this mixture.
Add 1/2 the egg mixture to dates, mix, then add 1/2 flour mixture. Repeat with other halves.
Pour into loaf pan. Let sit while the oven is preheating to 325F. (don't ask me why) My mother said so. lol
Bake in 325F oven for 50-60 minutes. Remove to rack to cool.
Slice thinly and smear on cream cheese.
