View Full Version : Freezing Cakes?

I've got a fete coming up at church (about 5 weeks away) and was wondering if anyone knew if any cakes can be baked and frozen? So as to cook as many as possible! :p

Appreciate any thoughts.

There are lots of different cakes that can be frozen as well as cakes that must be frozen (ie, ice cream cakes, some of those lovely layer cakes). Different kinds of cheese cake fair well with freezing.
Some instructions I found online:

To freeze: Place the cooled cheesecake on a baking pan and freeze, uncovered, until firm. Remove the cheesecake from the freezer, wrap it in heavy duty aluminum foil and place in a freezer bag. Seal and return to freezer. Can be frozen for several months. Thaw uncovered cheesecake in the refrigerator overnight.

I have froze regular cake tiers for two weeks with no loss of flavor or drying out. Just wrap them well! Defrost before frosting.

My mom always had this "thing" with food getting stale, so she would always freeze everything!!! lol.

The only experience I have with freezing cakes is cupcakes. I agree that they have to be wrapped well to preserve freshness and taste, but my mom would usually just throw any leftover cupcakes in a plastic Ziplock bag and toss in the freezer. They would usually last in there for about two months. If I wanted one I would just pull the bag out of the freezer and leave it on the counter for about an hour until they defrosted. I could tell hey were not "freshly baked," but still had the flavor and texture.

Most cake layers can be frozen if cooled completely and then wrapped in plastic wrap and then in foil.

Agreed with the above post...I usually wrap in plastic and foil and freeze without problems.
