HI
Does anyone know how to get chicken breasts to be tender after stirfrying? The chinese seem to have it mastered. Mine turn out pretty solid and dry.
Any ideas??

hi there,
Well, I am not sure how the orientals do it, except to cook it very fast and very hot in a good wok so the chicken gets done before it dries out. Maybe someone has a better technique, but I love to brine poultry as it keeps in the moisture. Check out this link and see what happens?? Let us know?

NoChef is correct.
Remember, stir frying is all about cooking under intense heat and cooking extremely fast. If your chicken is too dry or hard you probably overcooked it.
Also, marinating the chicken would obviously make them tender as well ;)
