I like easy recipes. So I thought I would share an easy recipe for one of my favorite chicken dishes:

PARMESAN CHICKEN

1 c. crushed Ritz crackers
3/4 c. Parmesan cheese
4 boneless chicken breasts
1/4 c. melted margarine

Mix 3/4 cup Parmesan cheese to each 1 cup of crushed Ritz cracker crumbs. Dip boneless chicken breasts in melted margarine and then roll in crumb mixture. Then roll chicken breast wide end to narrow end. Lay in baking dish seam side down.

Bake at 350 degrees for 1 hour. Cover the first 1/2 hour of cooking and then take cover off last 1/2 hour. Increase recipe according to needs.

Herbed Parmesan Chicken Breasts
Land O Lakes - Dinner Tonight

Servings 4 Page 26




Ingredients

½ cup shredded Parmesan cheese
1 teaspoon dried basil
½ teaspoon finely chopped fresh garlic
¼ teaspoon dried oregano
4 (4 oz.) boneless skinless chicken breast halves
¼ cup butter, melted



Directions

1. Heat oven to 400 F. Combine cheese, basil, garlic and oregano in pie pan or shallow bowl. Dip chicken in melted butter; coat with cheese mixture.

2. Place chicken into ungreased 8 or 9 inch square baking dish. Bake for 17 to 22 minutes or until chicken is no longer pink.

Thanks for that recipe, it sure sounds tasty!

I noticed that you were from Texas. Here's a recipe for all you Texans who like a H-O-T snack.

HOT-N-SPICY CHICKEN WINGS
5 lbs. bag chicken wings (drumettes)
12 fl. oz. Louisiana Pre Crystal Hot Sauce
1-2 sticks butter

Fry chicken wings until golden brown and drain on paper towel. Mix hot sauce and melted butter and pour into deep pan or crock pot. Add chicken wings to sauce and heat thoroughly.
