Well, Slowcooker, you've got me confused about your username, if you want quick recipes.

But here's one that is absolutely as delicious as if you ordered it in a restaurant!

Baked Stuffed Haddock

1 lb. Haddock filets (two good-sized filets)

Stuffing:
1 sleeve Ritz crackers, crushed
1 stick butter, melted
3 Tbsp. dry sherry
1 garlic clove, minced or 1 teas. garlic powder
Chopped fresh parsley or parsley flakes
Ground pepper to taste


Soak fish in a little milk first, about an hour. Mix stuffing ingredients.

Place fish skin down, in a baking dish. Pat stuffing on top. Bake at 375 F for 20 minutes. Serve piping hot with lemon wedges.

My sloppy joe's Sauce

Serves 4- 6



Ingredients

1 to 2 tablespoons extra virgin olive oil
1 to 1 ½ pounds ground turkey, beef or chicken
1 large onion, diced
1 small to medium green bell pepper, diced
1 tablespoon minced garlic (from a jar)
1 8 ounce can tomato puree
¼ to ½ cup KC Masterpiece barbecue sauce
1 tablespoon brown mustard (I used stone ground)
1/8 cup ketchup
1/8 cup white vinegar
2-4 tablespoons Worcestershire sauce
1-2 tablespoons Sriracha Hot Sauce (optional) if you like it spicy (it is an Asian hot sauce)




Directions

1. Preheat a skillet over medium heat. Add the olive oil, onion and bell pepper. Cook stirring occasionally for about 5 minutes. Add garlic and ground meat and sauté until meat is just done.

2. When meat is done add the remaining ingredients. Cook and stir until heated through.

Tortilla pizzas (these are great for leftover meat of any kind)

Servings 2

Ingredients

2 flour tortillas
1 ½ cups chopped or shredded chicken or other meat
3 tablespoons to 1/8 cup barbecue sauce, or other sauce
2/3 cup chopped tomato, or bell pepper or what ever veggie you like
2 cups shredded Monterey Jack cheese
1 cup shredded cheddar cheese
Sliced jalapenos, fresh diced or sliced tomatoes



Directions


Using a cookie sheet with a cake cooling rack on top.

Preheat the oven to 425

Place tortilla on cooling rack, top with sauce, cheese, then meat, adding any veggie you would like; if using.

Bake it until the cheese is melted and the tortilla is crispy and browned on the edges.

I like to use my home made barbecue sauce. Have fun with this recipe, use pizza sauce and pepperoni, or brown some ground turkey and use a taco seasoning, shredded lettuce and use taco sauce in place of pizza sauce, maybe green chiles, diced tomatoes and picante sauce, some sour cream and make a taco pizza. A pizza stone is wonderful for these too.

Black Bean Garnachas

Serves 4

Ingredients

1 can diced tomatoes with garlic and onion
1 can black beans or pinto beans, drained
2 cloves garlic, minced
1 to 2 teaspoons minced jalapenos (optional)
½ teaspoon ground cumin
1 cup cubed grilled chicken
4 flour tortillas
½ cup shredded sharp cheddar cheese



Directions

1. Combine undrained tomatoes, beans, garlic, jalapeno peppers and cumin in large skillet. Cook over medium high heat 5 to 7 minutes or until thickened, stirring occasionally. Stir in chicken. Season with salt and pepper, if desired.

2. Arrange tortillas in single layer on grill over medium heat. Spread about ¾ cup chicken mixture over each tortilla. Top with cheese.

3. Cook about 3 minutes or until bottoms of tortillas are browned and cheese is melted. Top with shredded lettuce, diced avocado and sliced jalapeno peppers, if desired. Or fresh diced tomatoes.

Braised Chicken Thighs (I would add the picture but it is too BIG)

Serves 4-6

Ingredients

6 boneless skinless chicken thighs (trimmed of any visible fat
1 tablespoon (your favorite chicken seasoning) I use (onion powder, garlic powder, salt, pepper, a small amount of sage and paprika)
½ cup all purpose flour
1 tablespoon olive oil
3 tablespoons unsalted butter
2 cups thinly sliced onions
3 tablespoons minced garlic (from the jar, 2 tablespoons if fresh)
¾ teaspoon dried thyme
¾ teaspoon dried rosemary (crushed in a mortar and pestle)
¼ teaspoon dried ground sage
¼ teaspoon black pepper
3 cups chicken broth (reserving ½ cup of the broth)
Steamed White Rice for serving. Optional




Directions

1. Season the chicken all over with the seasoning of your choice. Place the 1 /2 cup flour in a small bowl, and quickly dredge both sides of each thigh in the flour, shaking to remove any excess. Set aside.

2. Heat 1 tablespoon of the olive oil in a 10- to 12-inch flameproof Dutch oven or sauté pan over medium-high heat. Add 2 tablespoons of the butter, and when it has melted, place the chicken in the pan. Brown for 2 minutes on each side. Remove the chicken from the pan and set aside.

3. Add the remaining 1 tablespoon butter to the pan, and when it has melted, add the onions, garlic, thyme, rosemary, and sage, remaining a pinch of salt, and the black pepper. Cook, stirring as needed, until the onions are translucent, about 4 minutes. Sprinkle the 2 tablespoons dredging flour over the onions and cook for 2 minutes longer. Then whisk in the chicken stock and increase the heat to high. Return the chicken to the pan, and bring the stock to a boil. Reduce the heat to medium-low, cover the pan with a heavy, tight-fitting lid, and simmer for 20 minutes.
Uncover the pan, stir the bottom of the pan to prevent scorching, and turn the chicken over.


4. Cover the pan, and simmer for 20 minutes longer. Meanwhile, add 2 ½ tablespoons flour to reserved chicken broth and whisk or shake until all lumps are gone. Set aside.

5. Transfer the chicken to a serving platter and Stir the bottom of the pan. Add the reserved broth mixture to the sauce in the pan; stir to combine, and then spoon the sauce over the
chicken. Serve with steamed white rice.

Sorry I don't have any Indian recipes for ya. lots of quick and easy but nothing Indian. The closest thing I would have is a stir fry recipe that has a hint of cury powder in it.
