I've been trying to eat healthier lately and with that of course it includes more greens! I've been eating a variety of different salads but I have recently been stuck on this one:

Having experimented a bit I have found a handful of healthy salads which I can stand. what is your favorite salad recipe?

Well, main dish salad favs are.

Chicken pasta Prima Vera

Del Monte – Simple Meals & More

Servings 4 Page 15




Ingredients

6 ounces (2 cups) dried rotini or bow tie pasta
2 boneless skinless chicken breast halves, cut into strips
1 cup sliced green or yellow sweet pepper
½ of medium onion, thinly sliced
1 tablespoon olive oil
1 can (14 ½ oz.) diced tomatoes with basil, garlic and oregano
1 can (2 ½ oz.) sliced pitted olives, drained




Directions

1. Cook pasta according to package directions; drain.

2. Meanwhile, season chicken with garlic powder, salt and pepper, if desired.

3. Cook chicken, sweet pepper and onion in oil in large skillet over medium high heat 5 minutes or until chicken is no longer pink, add undrained tomatoes; simmer, uncovered, 5 minutes or until slightly thickened. Add olives, if desired.

4. Toss with hot pasta. Serve with shredded Parmesan cheese, if desired.

Chicken Kabob Caesar Salad

Betty Crocker - Grill It!

Servings 4 Page 19



Ingredients

1 pound boneless, skinless chicken breasts, cut into 1”pieces
8 medium green onions, cut into 4 inch pieces
1 large red bell pepper, cut into wedges
¾ cup Caesar dressing
1 bag (10 ounces) ready to eat romaine
½ cup croutons
¼ cup shredded Parmesan cheese



Directions

1. Heat grill to medium heat. Thread chicken, onions and bell pepper alternately on each of four 1- inch metal skewers, leaving space between each piece. Brush with ¼ cup of the dressing.

2. Cover and grill kabobs 10 to 12 minutes or until chicken is no longer pink in center.

3. Arrange kabobs on romaine; top with croutons and cheese. Serve with remaining ½ cup dressing.

My favorite summer salad is simple -- thick slices of vine ripened tomatoes sprinkled with fresh chopped basil, crumbled blue cheese or goat cheese, a few kalamata olives, thin slices of sweet red onion, a splash of fresh lemon juice, and a generous drizzle of olive oil. Don't forget a chunk of sourdough bread to sop up all the good juices! Delicious with grilled chicken or fish.

My favorite salad is this:

Ingredients:
1 pound bacon
3/4 cup mayonnaise
1/4 cup milk
1 teaspoon garlic powder
1/8 teaspoon ground black pepper
salt to taste
1 head romaine lettuce - rinsed, dried and shredded
2 large tomatoes, chopped
2 cups seasoned croutons

Prepare:
1. Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
2. In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
3.Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.
