Liketobake's Lovely banana muffins

1 cup white sugar
1/2 cup margerine
2 1/4 cups white flour
2 1/2 tsp baking powder
3 medium bananas
1/2 tsp baking soda
1 tsp vanilla
1 tsp rum extract
1/2 sour milk
2 eggs
1/2 cup coconut

Add milk, bananas, vanilla, rum, eggs, and margerine to a blender and blend until smooth. In a bowl mix together the flour, sugar, baking powder, baking soda, and coconut. Blend well. Add moist mixture to dry mixture. Place in greased muffin tins (unless you have nonstick ones), and bake until lightly golden on top.

Enjoy

Makes about 24 medium/small muffins

Cottage Cheese Rolls

Mom’s – Recipes

Servings Page





Ingredients

2 packages of yeast
½ cup warm water
2 cups cottage cheese
¼ cup sugar
2 teaspoons salt (the salt helps activate the yeast)
½ teaspoon baking soda
2 eggs
4 ½ cups sifted flour



Directions


1. Sprinkle yeast on warm water. Stir to dissolve. Heat cottage cheese til lukewarm.
Combine cottage cheese, sugar, salt, baking soda, eggs, yeast and 1 cup flour in a bowl. Beat at medium speed for about 2 minutes. Gradually add enough flour to make a soft dough that leaves the sides of the bowl when mixing.


2. Place dough in greased bowl, turn to grease all sides. Cover and let rise about 1-1/2 hours.
Turn dough on to lightly floured surface. Divide dough in to 24 pieces. Shape into a ball, or even size pieces.
Put into well greased baking pan, 13x9 if you have it. Let rise 45 minutes. – should be doubled in size
Bake at 350 degrees for about 20 minutes. They will turn a beautiful golden brown on top! Cool on rack for a minute or two if you can wait that long!



Notes These are so incredibly tasty, and were one of Dad’s favorites after I shared the recipe with Mom.

Nope not a typo. Sour milk is in a lot of different baked goods. I basically make my own by adding some vinegar to regular "fresh" milk. It works well in many baked goodies.

Oh okay. now that you mention the vinegar in fresh milk. It sound familiar. But never tried it.

I made this recipe again today but modofied it a bit. Still super yummy. I used sliced almonds instead of coconut, and I used about 2.5 cups of flour and I used some kula instead of rum extract. They were lovely.

Hey guys! i love muffins, and recently tried making these vegan prune muffins. They turned out to be really easy to make, and really yummy! my kids loved them, even though they usually reject anything I make thats vegan. I found the recipe on this new website called imcooked.com, i guess its kind of like youtube for recipes. Let me know what you guys think of the recipe!! And if anyone finds any cool recipes on this site please let me know!

here is another banana muffin recipe. it uses kamut flour so it might be a bit hard for people to make living in rural areas.

I made these the other day, they are lovely.:p I also created the recipe myself.:D

Cappuccino Coconut Muffins

2 cups all purpose flour
½ cup sugar
2 ½ tsp baking powder
3 tsp instant coffee powder
A few shakes of salt
1 tsp cinnamon
¼ tsp nutmeg
1 cup milk
1 tsp Kahlua
½ cup margarine melted
1 egg beaten
1 tsp vanilla extract
½ cup semi sweet chocolate chips
½ cup unsweetened shredded coconut

Preheat over to 350 degrees. Combine all the dry ingredients in a large bowl. Mix well. Add all the wet ingredients. Mix well. Fold in the chocolate chips. Place in 12 medium sized muffin tins. Bake for about 15 minutes (or until a tooth pick comes out clean).
Enjoy.

Liketobake's Pear Walnut Muffins

1 ¾ cup all purpose white flour
1 cup whole wheat flour
2 tsp baking powder
2 tsp cinnamon
¼ tsp nutmeg
A few shakes of salt
½ cup walnut chopped
1/3 cup plain yogurt
2 large eggs
1 ½-2 cups pealed chopped up pear
¾ cup skim milk
1 tsp lemon juice
1 tsp rum

Combine all dry ingredients in a bowl and mix well. Add the walnuts and mix well. In a blender blend together all the moist ingredients (including the pears). Add the blended mixture to the dry mixture, and mix well. Spoon batter into prepared muffin tins. Bake at 350 degrees F until slightly golden (or a tooth pick comes out clean).
Enjoy.

Makes 22 small-medium sized muffins. Would likely make 12 medium/large muffins.

Banana Chocolate Chip Hazelnut (Filbert) Muffins
Makes 12 very large (medium muffins)

1 cup whole wheat flour
1 cup all purpose (white four)
½ tsp baking soda
1 tsp baking powder
½ cup skim milk
2 tsp white vinegar
¼ cup olive oil
1 tsp vanilla extract
1 tsp rum (or rum extract)
1 cup lightly packed-loose brown sugar
2 large eggs
½ cup flaked/finely chopped hazelnuts (filberts)
½-¾ cup semi-sweet chocolate chips
About 1.5 cups of frozen or fresh banana pieces

Preheat oven to 350 degrees C. Prepare muffin tins. In a large bowl combine flours, baking powder, and baking soda. Mix well. Add the hazelnuts and chocolate chips and mix well. Set aside. In a blender add the banana, egg, milk, vinegar, oil, vanilla extract, and rum. Blend until smooth. Add the liquid mixture to the dry mixture, and mix until completely combined. Spoon batter into muffin tins. Bake for about until slightly golden on top and a toothpick comes out clean. (About 20-35 minutes).

Have you ever heard of sour milk? It makes some of the best biscuits and it makes other things rise like pancakes. I can see why Liketobake added this in.

I use it in my piecrusts as well.

Pumpkin Muffins

Dry Mixture

1 ½ cup all purpose white flour
½ cup whole wheat flour
½ tbsp baking powder
¼ tsp baking soda
½ tsp salt
½ tbsp cinnamon
1/8 tsp nutmeg
½ cup semi-sweet chocolate chips
¼-½ cup sliced blanched almonds

Moist Mixture
2 large eggs
1/3 cup vegetable oil
1 cup lightly packed brown sugar
½ cup (or more if needed) sour milk (skim milk plus 1 tsp white vinegar)
1 tsp vanilla extract
1-2 cups frozen or canned pumpkin

Preheat oven to 350 degrees F and prepare muffin tins (if needed). Combine dry ingredients in a bowl. Combine all moist ingredients in a blender, and blend until smooth. Add moist mixture to dry mix and mix until completely combined. Spoon into muffin tins. Bake for about 30 minutes or until a tooth pick comes out clean when poked.
