View Full Version : Spinach Artichoke Dip

1 can marinated artichokes, drained and chopped
2-3 cloves garlic, minced
1 cup mayo
1 cup parmesan cheese, grated
1 pkg. frozen spinach, thawed, squeezed dry
1 tsp. lemon juice

Preheat oven to 350F.

Combine all ingredients and put in 8x8 baking dish. Reserve some of the parmesan cheese for topping. Bake 30-40 minutes til heated through and slightly browned on top.
Can be served hot or warm.

OOO never made it with the spinach that sounds GOOD!

That's a great basic recipe. Now, for a variation, try crabmeat or minced shrimp instead of the spinach. In my crab dip, I use grated onion instead of the garlic, and top with toasted almonds.

Suzi, they serve it like that in restaurants here all the time. I love the stuff!!

Good idea Chef, but then it wouldn't be spinach/artichoke dip. LOL j/k Seriously, I have tried a similar dip with the crabmeat, it's soo good.
