Mary's Roasted Chicken Spice Blend

Sister Mary’s – Recipes

Makes about ½ cup




Ingredients

1 ½ tablespoons kosher salt (crushed in mortor and pestle)
¾ tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
½ teaspoon cayenne
1 ½ teaspoons ground sage
¾ teaspoon ground thyme




Directions

1. Mix all ingredients well in a bowl. Run through a spice grinder and, store in an airtight container.

Kecap Manis (Indonesian sweet soy sauce)

Yield: About 2 cups

INGREDIENTS PREP AMOUNT
Sugar, brown 1 cup
Soy sauce 1 cup
Water 1/2 cup
Galangal sliced in discs 1-2 slices
Star anise 1 each

METHOD
Basic Steps: Caramelize → Boil → Strain
Put the sugar in a small saucepan and place over medium-high flame. Stir until sugar begins to clump together and then melt. Stir constantly until sugar is all melted, but do not burn. Remove from heat and cool slightly.
Stir in rest of ingredients (Be careful!! The sugar is still hot and the liquid may splatter.) and return to heat. Stir to dissolve the sugar and boil 10-15 minutes until reduced and syrupy. Strain, cool and store refrigerated.

Magic Dust Spice
(Rub Seasoning and Spice)

1/2 cup paprika
1/4 cup kosher salt -- finely ground
1/4 cup sugar
2 tablespoons mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 tablespoons pepper
1/4 cup garlic powder
2 tablespoons cayenne

Mix well and store in tightly covered container.

Description: "This can be used as a meat rub or as a seasoning. It is good in most everything you want to add zing too."

Healthy Soy Sauce

1 1/2 cup boiling water
4 tablespoons low sodium beef bouillon (dry)
1 tablespoon dark molasses
4 tablespoons cider vinegar
1 teaspoon sesame oil, or vegetable oil

Combine. Store in refrigerator.
