How often do you eat salad? What types? Do you have any special reciepes?
Please share!

The salads I tend to make are pretty basic They are just green salads with lettuce (sometimes that is it for veggis) grated cheddar cheese or feta or both, croutons, and meat such as chicken when we have it. I like salad kits too although they are more expensive they at least include some red cabbage which I love, and carrot which I also really like. I love to eat salad but if you don't buy the premixed bags of greens etc it can be time consuming to make...

For dressing I sometimes make a basic home made dressing with salt, pepper, olive oil, and vinegar. Sometimes I use a store bought dressing: ranch, sundried tomatoe and oraganio, or honey mustard...

LiketoBake. I too eat quite a few salads. My favorite to make is what I call an Italian salad, with iceburg lettuce, tomatoes, red onions, pepperoncini, sliced black olives, shredded Parmigiano Reggiano, and a zesty Italian dressing with fresh grounde black pepper. my other average salad is a plain mixed greens salad with Ranch dressing. and croutons. Oh and on ocassion I make taco salads. NUMMY

Liketobake here is another salad that is good! Sounds Crazy but good. Low fat low carb and so on.

White Bean and Tomato Salad


Servings 4 (1/2 cup)


Ingredients

1 tablespoon olive oil or vegetable oil
1 teaspoon red wine vinegar
1/8 teaspoon salt
¼ teaspoon coarse ground black pepper
1 medium tomato, chopped
¼ cup sliced green onions
1 (15.5 oz.) can great northern beans, rinsed and drained




Directions

1. In medium bowl, combine oil, vinegar, salt and pepper; blend well. Add tomato, onions, and beans; stir gently until well mixed.




Calories 120 Fat 4g Sodium 230mg Fiber 5g Carbs. 16g Sugars 1g

CookNFool - I also LOVE full-flavored cheeses on my salad like Parmesan - do you grate your own or buy it already grated?

My kids like using the new Kraft Grate-It-Fresh Parmesan Cheese because they have fun grating it over their salad - no sharp grater to handle. (My husband and I like it because it tastes great, too!) I think it is a clever invention - it would be good for other cheeses too.

Sorry this took so long KitchenExpert. I have been away. I have never seen the Kraft Grate it fresh. I will have to keep my eyes open for it. I usually have a lerge chunk of Parmagiano Reggiano in the fridge. But sometimes will just buy a bit already grated or shredded. I also like to use a potato peeler to get the large wide strips and add them to the top soups, salads, and so on. they look prettty.

I am TRYING, very hard, to be good. Fortunately I love salad. I usually use a mixture of Romaine and Endive and I stay away from Iceberg. Just not much taste. I add whatever vegetables are on hand, but always include broccoli, spring onion, and small grape tomatoes. I really like good olive oil for everything, add a little vinegar and I am happy.

If the MOD's would approve, I would also like to add a subject to this thread. I have started eating breakfast again ( a Doctor thing) and am doing whole grain, natural etc like Kashi and others. I am adding a touch of honey for sweetness and everything is fine. I have also been thinking about "Milk". I can't stand 1% or less so I am entertaining the thought of going to Soy or Rice milk. I tried to drink it years ago and thought it was terrible. Maybe it
( or I ) have improved and I want to switch it out with milk on my cereal.

Any ideas, suggestions, hints etc. would be appreciated. :confused:

Hey Nochef, nice to see you back:)

As far as milk goes, I would think it would be easier and more pleasant to slowly wean yourself down to skim milk.

Myself I can't stand anything but skim milk, but I was brought up on it, so that is probably why.

I find soy milk okay, but I only like the vanilla flavor. Find a flavor that works for you.

Does your doctor thing involve cutting out or reducing both fats and sugars in your diet?

Also in regards to reducing fats, are you trying to reduce any particular kind of fat, such as transfats, or are you trying to reduce your cholesterol intake?

Hi LikeToBake ! Sorry I was gone, work duties..grrrrrr

I think I wil be brave and strong and try the vanilla Soy milk, probably "silk". Being raised on a farm I was used to "first hand" milk which is about 6% fat. Whole milk is generally 4%, then 2% etc, etc. I really don't want to go below 2% so I thought I would try Soy. ( the ex 60's Hippie in me I guess) :) I will try the vanilla, thanks !


and yes, fats, sugar and cholesterol . sigh.....

I personally don't enjoy eating salads, but I do eat it religiously because of the health benefits. At least twice a day with lunch and dinner. Thanks for the recipes above, guys.

This salad is really tasty but not a lettuce salad, it is a dinner in itself.
Chicken Pasta Primavera

Servings 4


Ingredients

6 ounces (2 cups) dried rotini or bow tie pasta
2 boneless skinless chicken breast halves, cut into strips
1 cup sliced green yellow sweet pepper
½ of a medium onion, thinly sliced
1 tablespoon olive oil
1 can (14.5 ounces) diced tomatoes with basil, garlic & oregano
1 can (2 ½ ounces) sliced black olives, drained




Directions

1. Cook the pasta according to package directions; drain.
2. Meanwhile, season chicken with garlic powder, salt and pepper.
3. Cook chicken, sweet pepper and onion in oil in large skillet over medium high heat 5 minutes or until chicken is no longer pink. Add undrained tomatoes; simmer, uncovered, 5 minutes or until slightly thickened. Add olives, if desired.
4. Toss with hot pasta. Serve with shredded Parmesan cheese, if desired.

Never tried them, I use the squeezeable or the pouring type of dressing containers.

I notice that only skinny women were advertised as using these spritzers. They should just spritz it direct on their tongue so they can save the lettuce for the wabbits.

Me and my sister got some spinach leaves,crumbled feta,cranberries,walnuts and vingeratte dressing. It was quick,easy and tasty!

I'm not too fond of eating salads, just the fact that I'm not a veggie lover. But I eat Caesar's Salad though. Just top your lettuce with breadcrumbs and thinly chopped bacon,seasoned with a special "garlicky"sauce...yum!:)

I find the best way to eat salad it to keep a variety in what you put in it. Like i put craisins in mine for fun, but only sometimes. Other times I put walnuts.

Would you like to share one of your salad recipes, changrit ? Will I need a salad spinner or can I do it the old fashioned way ? And if I burn it do you know where I could get a cheap fire extinguisher from ?

I love salad and tend to have it most lunch days at work and then a couiple more time sin the week at home!

I make a few different variations of salad, a few recent ones are below:

Option 1:

Lettuce
Spring Onion
Cucumber
Tomato
Avocado
Mozarella
Olives
Basil Leaves
Spinach Leaves

Dress in Lemon and olive oil

Option 2:

Lettuce
Red Onion
Cucumber
Tomato
Corriander
Parsley

(Can add Chick Peas)

Dress in black pepper, lime and olive oil......

LOL, Peter! Did you happen to notice that changrit's post was about a year old?

Mary, I love your recipe for white bean, tomato and green onion salad! I should just keep a couple of cans of Great Northern beans in my cupboard, since so many great recipes call for them!

Salads are so yummy! I've really enjoyed a spring mix of baby spinach & baby romaine they taste so good together and for a topping i like to use Salad Pizazz toppings...have you guys heard of them before?? IMO they're great especially because i really love the taste of pecans,almonds,walnuts in a salad...and as far as dressing i've always liked Ranch but lately i've been stuck on this Raspberry Vinaigrette :D delish!

Most days I have a basic cucumber tomatoes rocket and chilli salad (i love chilli). My boyfriend usually makes the dressing which is delicious ...balsamic vinegar, honey, lemon juice, black pepper and a teaspoon of milk. I occasionally have a carrot salad made from chickpeas carrot and cranberries with a simple lemon juice dressing.
