INGREDIENTS:
* 1/3 cup lime juice
* 1/4 cup fresh flash-leafed parsley springs
* 1/4 cup chopped fresh coriander
* 1 tablespoon chopped fresh lemon grass
* 1/2 teaspoon cracked black peppercorns
* 2 small whole snapper
* 1/2 cup vinegar
* 1/2 cup water
TAHINI SAUCE:
* 1/2 cup tahini paste
* 1 clove garlic, crushed
* 1/2 cup warm water
* 1/4 cup lime juice
* 2 tablespoons chopped fresh coriander
* 2 tablespoons chopped fresh flat-leafed parsley
METHOD:
1- Combine juice, herbs, lemon grass and peppercorns in bowl, fill fish with herb mixture.
2- Transfer fish to greased baking dish, pour over combined vinegar and water, cover with foil.
3- Bake in moderately hot oven about 25 min or until fish are tender.
4- Serve with tahini sauce, steamed beans and deep fried onion rings. (Recipe available in ''Vegetables'' and ''Snacks'' categories)
TAHINI SAUCE:
Blend or process paste and garlic, gradually add water and juice while motor is operating; stir in herbs.
