This is a great recipe to make on Christmas Eve and just put in the oven on Christmas morning....

Breakfast Casserole

1 lb. sausage, browned and drained
4 slices bread, torn in pieces
6 eggs
2 c. milk
1-1/2 c. shredded cheddar cheese
1 tsp. dry mustard
1 tsp. salt
1 tsp. pepper
1 c. sliced mushrooms
1 c. chopped green pepper
1 med. onion chopped

Butter 9 x 13 pan. Lay torn bread in bottom of pan. Spread sausage and sprinkle cheese over sausage. Add mushrooms, green pepper and onion. Mix eggs, milk, salt, pepper and dry mustard. Beat ingredients together and pour into pan over other ingredients. Refrigerate overnight. Bake 40-50 minutes at 350, uncovered.

Yum! I'd have some warm tortillas, scoop it into that, with generous hot sauce! :)
Maybe use chorizo sausage.

Wow. Very nice.
I'm going to downsize this and give it a go. Does the bread toast at all being on the bottom of the dish?

My post got lost...........

It doesn't really toast it Fred. The bread absorbs the egg mixture and it's more like a crust. Sort of like a bread pudding on the bottom but more solid. Did that make sense? lol

Yep. I just didn't want it "mooky" or soggy. If it turns to a crust, that good. Otherwise I was going to toast it first, but I didn't want to dry it out too much either.
I'll make it as is :^)

Something my wife would like, not me though (I am not a casserole person). But we make homemade cinnamon rolls for breakfast for Christmas morning.
