View Full Version : Crabmeat Stuffed Flounder

1-1/2 lbs. flounder filets (I used 4 filets, don't know what they weighed)
1-1/2 cups crabmeat, drained, flaked, cartilage removed)
1 T. finely chopped green pepper
1/4 tsp. dry mustard
1/4 tsp. Worcestershire sauce
s & p to taste
3 crushed saltine crackers
1 egg white
1 T. mayo
Bearnaise sauce (make your own or use Knorrs' brand)

Preheat oven to 400F. Pat filets dry.
Mix together crab meat, green pepper, dry mustard, W sauce, salt, pepper, and crushed saltines. Mix egg white and mayo together and add to crab mixture.
Melt garlic butter in bottom of baking dish.
Take crab mixture and place in middle of filet. Wrap both ends towards middle. Place in baking dish seam side down. Drizzle with melted garlic butter. Bake 10-15 minutes until fish is done and crab is heated through.

I added extra crabmeat to the bearnaise sauce and draped it over the filets.

I just noticed this. I love fish with a sauce on it. And stuffed too?!

I really enjoy a rich tasting seafood dish and this one with bearnaise (my favorite) sounds delicious. I think I might add a few shrimp in the sauce since I like seafood so much.

Great idea kitchen, that's why I added extra crabmeat to my sauce. lol The more the better I say.....

I had this dish somewhere in Winter Heaven, Florida and they mixed cheddar cheese in with the crab meat and stuffed all that into the flounder which had a light crust. No joke killer combo!
