Hope you enjoy this recipe.
3 parsnips (peeled and coarsely chopped)
3 sweet potatoes (peeled and coursely chopped)
1 large onion, cut in 8 pieces
1/4 cup olive oil
2 Tablespoons balsamic vinegar
2 teaspoons chopped fresh rosemary
1/2 teaspoon salt
Preheat oven to 450 degrees. Coat a large baking sheet with cooking spray.
Place parsnips, sweet potatoes and onion on baking sheet. Drizzle with oil and balsamic vinegar. Sprinkle with rosemary.
Bake 25 minutes or until vegetables are tender.
