I'm always looking to do something different with my turkey leftovers. I'm getting tired of casseroles.

What about making a turkey hash for breakfast or a turkey soup that can be frozen, so that you can enjoy turkey later down the line? I don't have any specific receipes yet, but those are two things I am looking into myself.

The turkey hash does sound good. I do make turkey soup, I actually start it Thanksgiving night while I'm cleaning everything up. lol

I make turkey salad...same recipe as chicken salad.
I have also taken sliced turkey and put it in an aluminum tray, covered it in gravy, and frozen it for later use as a quick meal. It's a nice treat in February.

I just finished making my turkey soup. I started it last night after cleaning off the bird. I strained it this morning added onion, celery and carrots and cooked it til it reduced some more and the veggies were tender. I'll add noodles to it when I serve it.......I'll be freezing some of it plain for stock.

A friend of mine whose house I went over to for dinner yesterday evening, he has som leftover dark meat from his turkey. He only likes white meat.
He offered me the dark meat, but I forgot to get it before I left. Said he'll save it for me.
