1 pkg. pistachio pudding mix
1 20 oz. can pineapple chunks (you can use crushed), drained and reserve liquid
1/2 cup chopped walnuts (or pecans)
1 tub Cool Whip
Combine ingredients and add 1/4 cup pineapple liquid. It should be light and fluffy. You may need to add more liquid, you don't want it soupy. It's best if chilled 24 hours. I have also switched it up at times and added fruit cocktail or mandarin oranges. You could also add coconut if you like.
