I am wondering if scalloped corn can be made in crockpot? I make mine normally with corn, milk, egg, crackers etc and bake in oven. However, do to lack of oven room at christmas I am wondering if it can be done in crockpot and if so how long? Thanks!

Hi CYNCYN,

I have never tried it, but I found this recipe on the internet, maybe do a trial run next week to check it out? I also understand about the eggs, good point, but I am wondering what it does to the tatse?
Let us know?

Crockpot Scalloped Corn

Egg product is used in this recipe instead of real eggs because they can stand up to long, slow cooking better.

INGREDIENTS:
2/3 cup flour
1/4 cup butter, melted
1 cup cholesterol-free egg product
3/4 cup evaporated milk
1 Tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
14 oz. can cream-style corn
15 oz. can corn, drained

PREPARATION:
Spray inside of 3-4 quart crockpot with nonstick cooking spray. Combine all ingredients in prepared crockpot and stir to mix. Cover slow cooker and cook on high for 2-3 hours until set.

Serves 8

You could also scrunch up some saltines and prebake them in the oven until toasty. Then when you serve, pull everything from the crockpot, put into another bowl, cover with the crackers ??
