I know that we have a varied group here from almost Vegan to Fried Freaks LOL. We need to share our favorite Thanksgiving recipes, even if our European friends do not celebrate it. So don't stick to Turkey or such, but just recipes for great, old fashioned "family "get togethers.

Let's see if I can start us off with something in the middle ground:

Corn Casserole

1 (15 1/4-ounce) ( 432 grams) whole kernel corn
1 (14 3/4-ounce) (418 grams) cream style corn
1 (8-ounce) (227 Grams) muffin mix (recommended: Jiffy) or add cormeal until thick
1 (250 ml) sour cream
1/2 cup (1 stick) butter, melted (113 grams)
1 to 1 1/2 cups shredded Cheddar cheese 45 grams or so

Preheat oven to 350 degrees F. 177 degrees celius or Gas Mark 4
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

1 seeded and diced medium cucumber
1/2 diced small red onion
1 drained 3 oz. jar small capers
1 16 oz container sour cream
1 chopped finely cup fresh dill
1 sliced side of smoked salmon
cut in triangular quarters thinly sliced dark pumpernickel bread
1 sliced in rounds seedless cucumber

Just a note to tell the group that I will be offline for a week or so. I am going 35 miles away to cook Thanksgiving for my handicapped sister and our clan, Great fun and I enjoy it. If you cook for one or two, try 20 and it will give u an adrenaline boost LOL

I was raised on an Iowa pig farm in the states so I understood at an early age about life and death and about planting a seed and waiting for the harvest. For my international friends, this holiday is about/started as a day of thanks for the harvest. It is very special to me. May you all have a blessed day and remember that the FIRST Thanksgiving took place in VIRGINIA!
