I love comfort foods, some I like to lighten up and some I like full fat! since we are coming up on our winter, lets share our favorite comfort foods from mom, or ones we have found or created our selves! That way we can all try them and maybe have a few new favorites this year.

Boiled Beef and Noodles (my mom used to make this with her leftover pot roast and gravy)
Servings 6
Ingredients
1-2 pounds leftover Mary’s Pot Roast, cut into bite size pieces
3-4 cups Mary’s Home Made Noodles
4-6 cups water
2 tablespoons kitchen bouquet
1 tablespoon garlic powder (to taste)
1 tablespoon onion powder (to taste)
2 teaspoons black pepper (to taste)
3-4 teaspoons beef base (to taste after you add gravy)
Any leftover gravy
Directions
1. In stock pot Dutch oven add water, seasonings (all but beef base), gravy, and kitchen bouquet.
2. bring to a boil stirring occasionally, check taste to make sure it has enough flavor. Add seasoning if needed.
3. After it comes to a boil add beef. Let return to boil. Stirring constantly add noodles one handful at a time. Stirring between additions to keep noodles from sticking to each other or the new noodles. After all noodles have been added and are cooked enough not to stick together. Let cook stirring occasionally for about 5 to 1 minutes or until the noodles are done.
4. To serve: in a bowl add mashed potatoes, and pour beef and noodles over them mix and eat or have a dinner roll. They are very filling. Enjoy

Creamy tomato Basil Soup

Servings 6
Ingredients
1 1 large onion, for 1 overflowing cup chopped
2 tablespoons minced garlic
¼ cup all purpose flour
4 cups tomato sauce
30 ounces low sodium chicken broth
½ cup half and half
¼ cup chopped fresh basil (or 1 ½ teaspoons dried basil)
¼ teaspoon dried thyme
¼ teaspoon dried dill weed
¼ teaspoon black pepper
Directions
1. In a large saucepan, heat the oil. Over medium low heat, sauté the onion and garlic until tender. Do not brown.
2. Stir in the flour and cook 1 minute.
3. Add the remaining ingredients. Stir until well blended. Bring to a boil, reduce heat, and simmer, uncovered, 20 minutes.
4. Pour in batches into blender or food processor and puree until smooth. Ladle into bowls and serve.
Notes this doesn’t freeze well. If you need to freeze I would do so before adding the cream. Add cream when reheating. If you want to avoid the blender, try pureeing onion and garlic in a good food processor before adding to the pan. One more note, I love garlic. But if you are not a garlic lover then I would cut it down to 2 cloves for the large recipe and 1 for the smaller one.
A little sour cream or some Parmigiano Regiano, or Grated Parm. Goes Great with this soup along with a Grilled cheese sandwich, Parmesan crisps, or just crusty bread.

Creamed Tuna On Toast
Servings 4-6
Ingredients
1 cube butter
1 can or pouch tuna, drained
½ cup flour
4 cups milk (you may need less milk, you may need more)
Salt and pepper to taste
10 to 12 slices white bread, Toasted
Directions
1. Melt butter in saucepan over medium heat. Add drained tuna stir to combine. Add flour, stir to incorporate and cook 2 minutes. Pour half of the milk in and stir to warm and thicken. Add more milk as needed to make the gravy the thickness you like.
2. To serve, place 2 slices bread on each plate. Either tear bread into bite size pieces or leave whole, what ever you prefer. Ladle the creamed tuna over bread on plates, and serve.
Another thing mom used to do is toast the bread and spread mixed tuna on it. (Toasted Tuna Sandwiches)

Last weekend, friend of mine had a tuna and peanut butter sandwich. I thought it was gross, but he says that he's been eating it that way for years.

LOL Good one! Not a biggie, just was commenting on the tuna and peanut butter being strange but so is creamed tuna on toast to most people. and creamed chipped beef my mom called it the same thing you do. LOL

Well, let's see what I have into the comfort food category. I've actually gotten in the Fall mode here in Ohio with our cool evenings.
This week I made pork western ribs by searing them and roasting on 300 F for 3-1/2 hours. The meat just fell off the bones. I then made pan gravy from the dripping remnants, mashed potatoes and some of our own frozen corn.

Another favorite is Smothered Chicken (http://flyfishohio.us/Smothered%20Chicken.htm) or Smothered Pork Chops (both made with the chicken recipe) made with any number of sides. Shown here is the pork chops with parsleyed redskin potatoes.

Of course, the ultimate comfort food, IMHO, is Meat Loaf, for which there are too many recipes to list here. I even order it in restaurants just to try different recipes.

Haven't had pot roast in a long time. Every time I go to the supermarket, they're not on sale and are too expensive. I usually get the smallest one there.

Well sort of......they were buy one, get one free. They were about $12.00 a piece. So 2 for $12.00....not a bad price. I bought four! LOL The leftovers get used for sammies so I get a couple meals out of it for my family of 3.

This is a recipe my grandmother handed down since I was a kid. I call it Polish Chili because I think I was in my 30's before I realized chili doesn't have potatoes in it. But my grandmother always called it chili. So here it is.
1-1/2 lb. ground beef
1 small onion, diced or use 2 T. dried onions
3 medium potatoes, cut into bite size pieces
1 can kidney beans undrained
2 cans tomato soup plus 2 soup cans water
1 T. chili powder
1 T. paprika
salt and pepper
Brown ground beef with onions. Drain. Add tomato soup and water. Add chili powder and paprika. Put in potatoes and simmer for 1 to 1-1/2 hours or until thickened. Add kidney beans and simmer for another 15-30 minutes.
(the chili powder and paprika are est. I just dump to cover the top of the pot, do it to taste)

Sure Megan, here it is.
Servings 4-6
Ingredients
1 pound ground beef
¼ cup butter or margarine
¼ cup minced green onions (mostly white parts) chop some green tops for garnish
1/3 cup white wine
1 ¼ cups beef broth
1 tablespoon beef base
4 tablespoons flour
1 tablespoon stone ground mustard (or Dijon should work)
1/3 cup sour cream
Directions
1. In a large skillet over medium heat add butter or margarine and ground beef. Brown beef in butter crumbling beef as it cooks; salt and pepper to taste.
2. After beef is browned add flour stirring constantly. Then add wine, beef broth, mustard, green onions and beef base; stir well. Bring to a boil turn down heat and let simmer until thickens about 20-30 minutes.
3. Stir in sour cream remove from heat and serve over egg noodles.
I topped mine as you can see with some extra green onions.

Sausage and mash with onion gravy.
Toad in the hole (sausage and yourshire pudding batter)
Beans on toast or on potato waffles.
Potato & leak soup
Pea and ham soup
Lasagna
Shepherds pie
Spaghetti bolognaise
Pizza
Chicken korma with rice
bread and butter pudding
Bananas and custard
Steamed treacle pudding
Chocolate souffle

We dont have sour cream here - do you think double cream will work? Also, what is beef base, is that dripping? Or stock? :confused:

EDIT - seen recipe online using philadelphia instead of sour cream. Philly is readily available here, what do you think?
