I am finally well enough to be back in the kitchen baking things. Today I made some cookies. Here I will share the recipe with you, and a picture of them.
Good eats:p

Chocolate Chip Oatmeal Cookies

1 c. margerine
1 c. sugar
2 large eggs
1 tsp vanilla
1 tsp bailey's irish cream liquer
2 cups of flour
1 cup rolled oats
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup chocolate chips
1/2 cup shredded coconut if desired

Cream together margerine and sugar. Beat in eggs, vanilla, irish cream liquer. Combine flour rolled oats baking soda, salt, cinnamon and coconut. Add this to creamed mixture. Mix in chocolate chips. Drop by the tsp or tbs (I did this for medium sized cookies) onto ungreased cookie sheets. Flatten with a fork. Bake in a preheated oven at 350 degrees for 12-15 minutes.
Yield: 32 cookies (using the tablespoon) medium sized.

I made some gingersnaps a couple weeks ago. I have been very busy with school, so I have not been posting much. Here is the reciepe.

Happy Baking:)

Ginger Snaps

Butter or margarine ½ cup 125 ml
Firmly packed brown sugar 1 cup 250 ml
Egg 1 large 1 large
Light molasses ¼ cup 50 ml
All purpose flour 2 cups 500 ml
Baking soda 1-1/2 teaspoons 7ml
Ground Ginger 2 teaspoons 10 ml
Ground cinnamon ½ teaspoon 2 ml
Ground Cloves ¼ teaspoon 1 ml
Ground Allspice ¼ teaspoon 1 ml

Preheat oven to 325 degrees F (160 degrees C)

Cream butter (or margarine)
Add sugar and beat until light and fluffy
Add egg and molasses and beat well
Combine the remaining ingredients in a large bowl
Add gradually to creamed mixture and beat until dough is fully blended
Drop by full teaspoons onto cookie sheets
Bake for 12-14 minutes or until golden

These are the easies ever peanut butter cookies. Try them; you'll love them.

Easy Chocolate-Dipped Peanut Butter Cookies


1 cup creamy peanut butter
1/2 cup sugar
1 egg
4 squares BAKER'S Semi-Sweet Baking Chocolate, melted
1/2 cup finely chopped PLANTERS Unsalted COCKTAIL Peanuts



PREHEAT oven to 325°F. Mix peanut butter, sugar and egg until well blended. Refrigerate 30 min. Roll peanut butter mixture into 18 balls. Place, 2 inches apart, on ungreased baking sheet. Flatten each ball, in criss-cross pattern, with fork.
BAKE 18 to 20 min. or until lightly browned. Cool 5 min. Remove from baking sheet to wire rack; cool completely.
DIP each end of cookie into melted chocolate, shaking off excess. Dip into chopped peanuts. Place cookies on parchment or wax-paper covered baking sheet. Refrigerate until chocolate hardens.

These are really pretty cookies...great for the Holidays:)

Stained Glass Cookies

1/2 cup (1 stick) butter or margarine, softened
1/2 cup sugar
1/2 cup honey
1 egg
1 tsp. vanilla
3 cups flour
1 tsp. Calumet Baking Powder
1/2 tsp. baking soda
1/2 tsp. salt
5 rolls (1-1/4 oz. each) ring-shaped hard candies



BEAT butter, sugar, honey, egg and vanilla in large bowl with electric mixer on medium speed until well blended. Add flour, baking powder, baking soda and salt; mix well. Cover. Refrigerate at least 2 hours.
PREHEAT oven to 350°F. Place dough on lightly floured surface; roll out to 1/4-inch thickness. Cut into desired shapes with 2-1/2- to 3-inch floured cookie cutters. Trace smaller version of each cookie shape on dough, leaving 1/2- to 3/4-inch border of dough. Cut out and remove dough from center of each shape; set aside. Place cutouts on baking sheets covered with foil. Shape remaining dough into ball; re-roll to make additional cutouts.
CRUSH each color of candy separately between 2 layers of wax paper with mallet. Spoon crushed candy inside centers of cutouts.
BAKE 6 to 8 minutes or until candy is melted and cookies are lightly browned. Cool cookies completely before removing from foil.

Makes about 4 dozen

This cookie recipe is very easy to make and make sure you don't underbaked the cookies because it taste nicer when it is crispy:-

- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1/2 cup plus
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground fennel seed
- 1/4 teaspoon salt
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1/4 cup pine nuts

Using an electric mixer, beat the butter, sugar, vanilla, fennel seed, and salt in a large bowl until light and fluffy. Beat in the egg. Add the flour and mix just until blended.
Transfer the dough to a sheet of plastic wrap. Shape the dough into an 8-inch-long log. Wrap the dough in plastic and refrigerate for 2 hours.

Preheat the oven to 350 degrees F. Line heavy large baking sheets with a silpat or parchment paper. Cut the dough log crosswise into 1/8 to 1/4-inch thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Press the pine nuts decoratively atop the cookies. Bake until the cookies are golden around the edges, about 15 minutes.

MAKES : 2 - 3 Dozen depending on the size of the cookies.

Caramel Apple Cookies
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup sugar
1/2 cup butter or margarine -- softened
1/2 cup shortening
1 1/2 teaspoons vanilla
2 eggs
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Red paste food color, if desired
About 24 wooden sticks with rounded ends
Caramel Glaze -- (recipe follows)

CARAMEL GLAZE
1 (14 ounce) package vanilla caramels
1/4 cup water
Heat oven to 400o. Beat sugar, butter and shortening in large bowl
with electric mixer on medium speed, or mix with spoon. Stir in vanilla
and eggs. Stir in flour, baking soda and salt. Stir in food color to tint
dough red.
Roll dough 1/4 inch thick on lightly floured cloth-covered surface. Cut
with 3-inch round or apple-shaped cookie cutter. Place 2 inches apart
on ungreased cookie sheet. Insert wooden stick into side of each
cookie. Bake 8 to 9 minutes or until edges are light brown. Cool 2
minutes; remove from cookie sheet to wire rack. Cool completely.
Spread top third of each cookie (opposite wooden stick) with Caramel
Glaze. Hold cookie upright to allow glaze to drizzle down cookie.
CARAMEL GLAZE:
Heat caramels and water in 2-quart saucepan over low heat, stirring
frequently, until melted and smooth. If glaze becomes too stiff, heat
over low heat, stirring constantly, until softened.

I created this recipe today myself and love it.

Liketobake’s Plain and Simple Chocolate Chip Cookies


INGREGIENTS

Butter or margarine 1 cup
lightly packed brown sugar 1 ¼ cups
Eggs 3 large
vanilla extract 1 teaspoon
Kahula liquor 1 teaspoon
All-purpose flour 3 cups
baking soda 1 teaspoon
semi-sweet chocolate chips 1 ¼ cups
salt optional ½ teaspoon

Cream butter. Add sugar and beat until fluffy. Add eggs, vanilla, and Kahula and beat until blended. In a separate bowl mix together the flour and baking soda. Add dry mixture to creamed mixture. Stir in chocolate chips by hand until even distributed

Drop by spoonfuls (I use the teaspoon) onto non-greased cookie sheets
Bake for 10-12 minutes or until golden.
Cool on racks.
Enjoy.

Bakeless Chocolote Drops

Makes about 35 to 40 medium to small cookies



Ingredients

2 cups sugar
½ cup milk
1 stick margarine (1/2 cup)
¼ cup cocoa (Hershey’s Unsweetened Cocoa)
3 cups quick cooking oats
1 teaspoon vanilla
½ cup creamy peanut butter



Directions

1. Boil sugar, milk, margarine, and cocoa for exactly 2 ½ minutes. Take off the heat and add the remaining ingredients. Mix well but s mix quickly as the cooler it gets the more it will set up.

2. drop by teaspoonful (or use a medium restaurant scoop) onto waxed paper to cool As the cool the will set up hard.

Chocolaty Double Crunchers
Taste Of Home’s – Cookies & Bars

Makes about 2 doz. Page 23



Ingredients

½ cup butter or margarine, softened
½ cup sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
1 cup all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup quick cooking oats
1 cup crushed cornflakes
½ cup flaked coconut
Filling
2 packages (3 ounces each) cream cheese, softened
1 ½ cups confectioners’ sugar
2 cups (12 ounces) semisweet chocolate chips, melted



Directions

1. In a mixing bowl, cream butter and sugars. Add egg and vanilla; mix well. Combine flour, baking soda and salt; add to creamed mixture and mix well. Add oats, cornflakes and coconut. Shape into 1 inch balls and place 2 inches apart on baking sheets. Flatten with a glass dipped lightly in flour.

2. Bake at 350 F. For 8 to 10 minutes or until lightly browned. Remove to wire racks to cool. For filling, beat cream cheese and sugar until smooth. Add the chocolate; mix well. Spread about 1 tablespoon on half of the cookies and top each with another cookie. Store in refrigerator.



Notes Haven't tried these yet but they look wonderful. who ever tries it please let me know how they are?

Oatmeal Chocolate Chip Cookies

2 cups all purpose flour
1/8 tsp salt
1 tsp baking soda
¾ cup margarine
1 ½ cups brown sugar
3 eggs
¾ cup unsweetened shredded coconut
½ semi-sweet chocolate chips
2 cups uncooked rolled oats
2 tsp vanilla extract
1 tsp Kahlua liquor

Preheat oven to 350 degrees. In a bowl combine flour, salt and baking soda. Blend. Add the margarine and brown sugar (cream this mixture). Add vanilla, eggs, Kahlua, and beat well. Add rolled oats, and mix well (you may need to kneed the dough). Once the dough is well formed knead the coconut and chocolate chips into the dough. Drop the cookie dough onto cookie sheets and bake until slightly golden in color (about 12 minutes). Makes about 36 medium sized cookies.
