How to dry tomatoes:
Slice the tomatoes about 1 cm in thickness, sprikle table salt on both sides and leave them to dry. it will take 4-5 days in hot climate. Turn them over to dry the other side. Store them in airthight bags or in a jar with olive oil.

Never sundried cherry tomatoes but done them in oven couple of times, they are very tasty. Only thing they are not widely available during the summer in Turkey. They seem to prefer bigger tomatoes for drying, for making tomato paste and bottling.

Do NOT store sun-dried tomatoes or any low-acid food item in oil at room temperature. It becomes a breeding ground for botulism toxin.

Not to mention the oil that it's in going rancid!

Thanks for that mcnerd! Funny enough I do not like them in oil, I pack them and stick them in to the freezer. Immerse them in hot water just before using them for cooking or salads.

I've bought them jarred in oil and dry. I like the ones jarred in oil much better.

I like the Dried ones myself especially if i'm gonna cook with them. The sdt's that are jarred in oil are good for salads cause they aren't too overpowering. I like cooking with the dried ones becuse they will flavor whatever dish i am making a little more.
