View Full Version : What's your most exciting way to cook carrots?

Hello everyone!

I just bought a 10kg bag of carrots very cheap (I love to buy my stuff in bulk). Have you got some great recipes that can help me get it eaten without cooking the same thing twice???

Here's my favorite carrot recipe (four servings). Or rather my fat-reduced version of it (someone in my house needs to lose weight, and it's not me, but I don't feel like cooking two things at a time). But it tastes just as good as the original recipe. It takes a while to make, especially if you don't have an electric grater, but it's worth every minute of work you put in. My family loves it.

Carrot Lasagna

Ingredients

50 g margarine
60 g flour
1 l low-fat milk
50 g low-fat cheese, grated
4 eggs, lightly beaten
1 tsp. salt
˝ tsp. cayenne pepper
750 g carrots, peeled and grated
250 g lasagna, uncooked
100 g low-fat cheese, grated


Steps

Preheat the oven (150°C). Slightly grease a rectangle ovenproof dish.
Melt margarine in a pot, mix in the flour, stir for a few minutes until golden. Gradually add milk, frequently stirring until mixture is smooth.
Bring to boil, allow cooking until the sauce thickens, continuously stirring. Remove from the heat, mix in the cheese, and allow to cool down a bit. Stir in the eggs, season with salt and cayenne pepper and mix with the grated carrots.
Pour one third of the sauce into the dish, cover with a layer of pasta, and continue with this until pasta and sauce have been used up. The last layer must be sauce. Sprinkle cheese on top and bake for 40 minutes until golden.
Serve just like that or with a simple green salad.

I love to boil them in water with butter, salt, and pepper.
Steam them and eat with butter salt and pepper.
I also like to mince them up and put them in with my rice with minced broccoli
Add them to soups and to spaghetti if I need to get rid of them. Not too many though as they will make your sauce kinda sweet. I like to julienne them and chop them so that they are really small and no one knows they are there.

I like to slice raw carrots on the bias so they look pretty and have lots of surface area and cook them in a saucepan with butter, honey (or brown sugar) and fresh ginger, cook until the water from the carrots evaporates and the sauce becomes a nice thick glaze.

I don't have measurements, it is just something that I through together one night and really liked it, so I make them this way whenever I have carrots hanging around.

I'm sorry but I don't think there really is an exciting way to cook carrots, yuk. Give them to me raw, the best way!

If I cook them, they are still kind of crisp.

Or I eat them raw or I juice them for a nice fresh cold cup of carrot juice.

I agree that I like carrot raw over cooked, but a pureed carrot and ginger soup can be very nice. Put a bit of sour cream in a pastry bag or even just a ziplock bag with a hole and use in a aesthetic manor. Also with a grilled cheese on the side, made good quality whole wheat bread course; store bought bread grosses me out and reminds me of nail polish remover.
Also, carrots and simple dip as boring as it sounds can be very pleasing.

One of the things that I can't stand is carrot cake! Makes me sick to my stomach!

Place carrots in a pan with veggie broth (or chicken broth if you prefer) Cook carrots until tender crisp. Stir in a jar of pepper jelly. Very nice spicy side dish.

Before, I didn't like to eat carrots. I don't know but it's just not my type. But when I had tasted the dish which my church mate prepared, it was like I fell in love for the first time with carrots. Since that time, I always want to cook a dish with carrots in it.

Raw is my pick as well - you can get through a lot of carrots with the juicer as others have mentioned - I can do about 6-8 carrots in one go in the juicer - add some celery to spice it up. You'll get through the 10 kgs in no time :)

Grilled Carrots


8 medium carrots
1/4 cup butter
1 T. balsamic vinegar (or to taste)
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 teaspoon minced fresh Italian parsley

Peel carrots and cut the really fat ones in half lengthwise, so the carrots are all about the same thickness. Steam them until they are partially cooked but still crisp, about 10 minutes. Rinse carrots under cold water for at least 10 seconds to stop the cooking. The carrots may be cooked up to this point several hours ahead of serving.

Prepare charcoal or gas grill for direct medium-high heat.


In a small saucepan over medium heat, melt the butter with the vinegar, nutmeg, salt and pepper. Brush the carrots with about half the butter mixture.

Grill until you get charring, 3 to 5 minutes. Move the carrots to a platter, brush them with the remaining butter mixture. Sprinkle the parsley over the top. Serve warm.

I like to cook carrots in butter and beef broth and when the carrots are finished I take them out and let the liquid reduce until it thickens and becomes a glaze.

We like them with pineapple chunks, brown sugar and cinnamon...never ate them much before (cooked) but this combo makes them great

I used to think so too, Kimchee, but they are so sweet I can't believe I never ate them cooked as a kid.
And I can attest to QSis' recipe. They are great grilled.

That's what I don't like about them.. that peculiar sweet taste they get.

You are welcome to all my cooked carrots, LOL! Although cooked to death in soups
and lightly cooked in stir fries, I can eat.

No, they have to be hard or semi-hard for me.

Did you also know that eating raw carrots helps keep your teeth clean? Sort of like a dog

carrots are amazing when they're grated into pasta sauces... they add thickness and flavour and are yummy!

Check out this recipe on Lasagna Verdi with Spicy Red Kidney Beans for excellent sauce that's got carrots in it. I made it the other day.

I also like to cut them up along with some potatoes and cook them in foil pouches with butter, salt, pepper, Italian seasoning and parm cheese.

I don't know if it is exciting. But I think it is super delicious. I like to saute carrot slices in some butter and then just before serving add a bit of S&P and fresh tarragon.

Roast them in anumber of ways.
With Olive oil and sea salt
With wholegarin mustard.
Honey glazed.
Boil em and mash up with other root veg such as parsnip.
Or raw carrot sticks chopped with raw broccoli chilli soy sauce and sesame seed. Really healthy

I like carrots this way:

- wash the carrots with a brush in cold water (dont peel the skin, its too valuable :) )
- cut the carrots on small slices, chop under the angle of 45 degrees :-) so one side is always little thicker than the other (sounds sophisticated but it is easy and I dont know how else to describe it)
- cut onion to cubes
- cut garlic to slices
- fry onion + garlic, adding bit of salt and white pepper
- after a minute add the chopped carrots, fry for 3 minutes and then add 1/2 cup of boiling water and put the lid on
- keep under the lid on small fire for about 15-20 minutes
- done - should get melty and creamy

Tequila Carrots

3 med carrots
Boiling salted water
3 T. butter
1/4 t. dried dill weed
salt and pepper
1/4 C. Tequila
--------------------------------------------------------------------------------

Peel carrots and cut in thin diagonal slices.
Cook in boiling salted water 10 minutes; drain.
Melt butter in large skillet or presentation pan.
Add carrot slices.
Sauté' 2 - 3 minutes, sprinkling with dill, salt and pepper.
Add tequila; ignite.
When flames die down, stir and serve
