Joe's Home Fried Potatoes

[Dough Boy]

I make these all the time, but never wrote down a recipe, so here it is.

Diced potatoes (Russet, Idaho, Red Skins, whatever you like)
Diced sweet onion (however much you'd like
Olive oil
Butter
Salt & pepper to taste
Chopped clove of garlic
Diced fire roasted red pepper (amount to suit)
Basil
Chives
Oregano
Paprika
Grated Parmesan Cheese (Optional topping when served. Shown below.)

Cut up potatoes into 1/2" cubes. Saute the onions in olive oil and butter until translucent, then add the remaining ingredients. Mix and cover with lid, tossing periodically until the potatoes soften and begin to brown.

I make these potatoes in a cast iron skillet for best results, but any non-stick pan will do.

That really sounds lovely!

I also figured out that potatos taste great with rosemary (although my hubby hates this spice).

1. Chop an onion and fry it in a bit of olive oil until golden.
2. Add a teaspoon ground cumin and one of rosemary and fry for another minute.
3. Add the thinly sliced potatoes (1 kg) and stirfry until the potatoes are soft. You can also mix the potatoes with butternut and carrots.
4. Season with oregano, freshly ground black pepper and a bit of salt.

If you make it just with potatoes, it goes well with meat, especially lamb. If you mix the veggies, then you can use it just like that as a main meal. I still add some whole grain rolls.
