This is one of my favorite " The week after Thanksgiving, use up the dark meat recipes" LOL
Sesame Turkey & Broccoli Stir-Fry
1 tablespoon sesame seeds
2 teaspoons vegetable oil
3/4 pound turkey breast cutlets
cut into 1-inch-wide strips or dark meat pieces chopped or chicken etc.
2 cloves garlic finely chopped
4 cups broccoli florets
6 green onions cut into 1 1/2-inch lengths
1/2 cup reduced-sodium chicken broth
1 tablespoon soy sauce
1/8 teaspoon hot red pepper flakes -- (optional)
4 cups lettuce -- shredded
1. In a large nonstick skillet, heat sesame seeds over medium heat, shaking pan and stirring often until seeds are just golden brown. Remove seeds from pan to a small bowl and set aside.
2. In the same skillet, heat oil over medium-high heat. Add turkey and garlic; cook 2 minutes, or until lightly browned, stirring constantly. Add broccoli, green onion, chicken broth, soy sauce, and pepper flakes, if using. Cook 3 minutes, or until broccoli is tender-crisp, stirring often.
3. Meanwhile, arrange lettuce on a serving platter or divide among individual plates. Top with the turkey mixture, sprinkle with sesame seeds, and serve immediately.

Great recipe, Nochef! I actually decided to try this one out for tonight's dinner. I must admit that I did not follow it to the letter, as was suggested elsewhere on this site. I didn't have enough lettuce on hand, so I decided instead to serve it on a bed a rice. I also increased the amount of broth to one 10 ounce can and added a full can of water. I also spiced up the turkey a little with salt, pepper, sage, and paprika. I know we are supposed to be cutting back on our salt consumption, but my husband actually added more soy sauce to his meal at the table, because nothing I make is salty enough for him! Nevertheless, we loved it! Thanks for the recipe!

1. Cut beef with the grain into 1 ½ inch wide strips; then cut each strip across the grain into 1/8 inch thick slanting slices. In a bowl, stir together cornstarch, soy, sherry, and water. Add meat and stir to coat, then stir in 1 ½ teaspoons of the oil and let marinate for 15 minutes.
2. Meanwhile, prepare cooking sauce; stir together all cooking sauce ingredients, and set aside.
3. Place wok over high heat; when wok is hot, add 2 tablespoons of the oil. When oil begins to heat, add ginger and garlic and stir once. Add meat mixture and stir fry until meat is browned (1 ½ to 2 minutes); remove from wok and set aside.
4. Pour remaining 1 ½ tablespoons oil into wok. When oil is hot, add celery and onion and stir fry for 1 minute. Add bell pepper and stir fry for 1 minute, adding a few drops of water if wok appears dry. Add tomatoes and stir fry for 1 minute. Return meat to wok. Stir Cooking sauce, pour into wok, and stir until sauce boils and thickens. Season to taste with salt.

Teriyaki Sauce and Glaze
Best Of – Food Network
Makes 1 ¼ cups
Ingredients
Sauce
1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice wine (Mirin)
1 tablespoon, plus 2 teaspoons brown sugar
1/4 cup sugar (I substituted Splenda for the sugar, and didn’t use quite a ¼ cup.)
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger
1. Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
Glaze:
1/2 tablespoon cornstarch
1 tablespoon water
To make glaze:
Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened.
Notes I used almost the full ¼ cup of the splenda. It was still too sugary. So need to cut the brown sugar down by the 2 extra teaspoons and the spelenda in half. Taste to see if it is sweet enough.

Yes I agree with momof2, Nochef! The recipe looks great. It would be particularly appealing for my husband, who is always looking to reduce his carb intake. But for my kids I think I would also serve it on a bed of wild rice. Thanks!

I like Kimchi Fried Rice(Kimchi Bokkum bap).
It's Korean food.
- Ingredients
Rice for one person
2 stalks of kimchi
1/4 of onion
50g of minced pork
3roots of green onion
1 teaspoon of ground garlic1teaspoon of soy sauce
1 tablespoon of sesame salt
1 teaspoon of sesame oil
salt
pepper powder
cooking oil
- Prepare
1. It is better to use a little under-cooked rice, or if there is any, cold rice.
2. Take out the insides of kimchi and cut them into small pieces.
3. Chop onions and green onions into small bits and mince the garlic.
4. Season the minced pork with soy sauce, minced garlic and pepper powder.
5. Saute the pork with cooking oil in frying pan. When the pork is cooked, put the onion and kimchi and cook more.
6. After five minutes, put in the minced garlic and green onion. Cook a little more and turn off the heat. Mix well after.
7. After mixing kimchi and pork with rice, turn on the heat again and taste with salt and pepper. Finally put a little bit of sesame salt and sesame oil.
8. Put the rice into the dish and sprinkle sesame salt. It maybe served with crushed toasted seaweed.
