Soft Ginger Bars
Land O Lakes – On line recipe
Yield 48 Bars
Ingredients
1 ¼ cups sugar
1 cup butter or margarine, softened
1 egg
3 tablespoons molasses
1 teaspoon vanilla
3 cups all purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
¼ teaspoon salt
¼ teaspoon ground cloves
3 tablespoons coarse decorator sugars (if desired)
Directions
1. Heat oven to 350 F. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). Add egg, molasses and vanilla. Continue beating, scraping bowl often, until creamy (1 to 2 minutes).
2. Reduce speed to low; add flour, baking soda, cinnamon, ginger, salt and cloves. Continue beating, scraping bowl often, until well mixed (1 to 2 minutes).
3. Press dough into greased 15x10x1 inch jelly roll pan. Sprinkle decorator sugar on top (if using). Bake for 16 to 20 minutes or until golden brown. Cool completely. Cut into desired shapes with knife or cookie cutters.
Tip: To make ornaments: carefully make hole in top of bars with a drinking straw. Cool; thread 1/8 inch ribbon through hole and tie into bow.
High altitude information: Reduce sugar to 1 cup and increase flour by ¼ cup to 3 ¼ cups. Bake at 350 F. for 18 minutes.

Sister Mary’s – Home Style Cookbook
Makes about 115 one inch pieces
Ingredients
½ pound margarine
5 ounces marshmallow cream
3 packages milk chocolate chips
2 ½ cups nuts (optional)
4 ½ cups sugar
1 can evaporated milk
½ teaspoon salt
Directions
1. In a large bowl combine chips, margarine, marshmallow cream and nuts. Set aside.
2. In medium saucepan combine sugar, milk, and salt. Heat to boiling over medium high heat. Boil together 8 minutes.
3. Remove from heat and add to ingredients in bowl. Stir until all chips are melted and smooth. Spread on cookie sheet and let cool completely before cutting.
