Hi there, recipe collectors!

Has anyone got a recipe how to make jam or something similar without or at least a minimum of sugar? Or an idea where I could find some?

All I got consists to a large amount of sugar. In Germany we got a special kind of sugar for jam of which you need only a third because it somehow contains a substance that makes the jam firm, but here in South Africa I can't seem to find anything similar. I love jam but if I want to make my own there's just too much sugar in there for my liking.

I have to agree Elisha, I love German goods they just seem to taste better and the sweets are not as sugary tasting. I can get German goods at our Whole Foods Markets. and can pick up low sugar and sugar free jams and jellies at our grocery stores. But for you in South Africa HMMMMM......

You can try this website as it has a LONG list of jams jellies, perserves, freezer jellies and low sugar jellies etc... Hope this helps you.

Hi Mary,

thanks for the tip! They do have some nice jellies there I want to try out. I thought it might work with gelatine but I didn't have the time to experiment and find out how much I need, so having these recipes will definitely help.

Most jams use "pectin" (made from apples) to help fruits to gel when processed for canning. There are three types of pectin: regular (sugar required), no sugar required, and freezer (no canning required). Pectin can be made yourself from apples or you can order online if you don't have it locally.

A commercial pectin is known as Pomona Pectin which requires no sugar and is much easier to work with but is more expensive than home-used pectins. You can find it online by searching for "Pomona Pectin."

Great information about pectin, my mother used to buy it and use it to make no sugar jams.
It is very good and I did not even notice any difference.

maybe you could try using jaggery as a substitue for sugar

SplendaŽ is the only artificial sweetener approved for canning purposes and even then a non-sugar type pectin needs to be used.

Can you find out from her how she used it? The only recipes I got are normal jam recipes and I suppose using pectin requires a bit of a different process. I most likely can't simply leave the sugar and add pectin?
