I had this for dinner the other night, it was gorgeous! & not fattening!

Serves 2
Prep Time 10mins
Cooking Time 30 mins
Ingredients

* 2 Free range chicken breasts
* 4 Rashers Parma ham
* 6oz/170g Mushrooms (thinly sliced)
* 2 tsp Whole grain mustard
* 2 tsp Extra virgin olive oil
* Salt and freshly ground black pepper

Method

* Use enough aluminium foil to create a parcel for each chicken breast
* Spread 1 tsp of extra virgin olive oil on each piece of foil
* Lay 2 rashers of parma ham side by side on each piece of foil
* Spread 1 tsp whole grain mustard over the parma ham
* Lay the chicken breast on top of the ham, cover with mushrooms and season with salt and freshly ground black pepper
* Fold the foil over the top to form a parcel and seal
* Place in a pre heated oven 220°C/425 °F/gas mark 7 for 20 minutes, open the parcel and cook for a further 10 minutes
* Serve with roasted vegetables
