View Full Version : Lemon Herb Chicken

This lemon herb chicken recipe is quick, easy and excellent! You can grill or bake the lemon chicken and it comes out great both ways. We have used this lemon herb chicken recipe for bone in chicken and boneless breasts. It is hard to mess it up and people who eat it love it.

Ingredients:
3 cups Lemon juice
1 ½ cups Salad oil
½ cup Parsley flakes
4 Tbsp Rosemary
3 Chickens, quartered

Directions:
1. Combine first four ingredients and mix well.
2. Place chickens in a large bag and pour marinade over them.
3. Let marinate for at least 2 hours.
4. Remove chicken from marinade and grill or bake as desired.

If you have any of the lemon herb chicken left it makes a great chicken salad!

Hi i think it will taste yummy. Obviously chicken will be good to taste. Give some more tips for fish as well. Thank u 4 ur chicken recipe :)

Thank you, Chris and Cindy, for the Herbed Lemon Chicken recipe. I know it is good because my sister always marinates chicken in lemon juice and herbs, but she doesn't use oil (I'm going to mention this to her). She marinates it overnight and it is always tender, moist and delicious. Also, she uses salt and pepper in her marinade. I notice that you don't. Why? Is it because salt will pull too much moisture out of the meat? AND ... I am enjoying your Family Recipe Blog --- your recipes sound very yummy!! Thanks, again, for sharing.

That sounds like a great marinade and I just happen to have everything. It might make a nice change for me, as I usually fix chicken the same ways all the time. I think I'll go take some thighs out of the freezer.

I do something similar to this with roast chicken. I stuff the chicken with a bulb of garlic cut in two, few tablespoons if olive oil, pepper and salt and a hand full of fresh Thyme. Then roast normally and baste with lemon juice,oil and garlic.
