This recipe was taken from Volume 2 Issue 2 (Deliciously Healthy) of Asia's In Good Taste, The Premiere Cookbook Magazine.
GRANOLA CEREAL
3 1/4 cup rolled oats
2 tbsp wheat germ
1 tsp ground cinnamon
2 tbsp sesame seeds
1/2 cup nuts (walnuts, pecans, macadamia, pili)
2 tbsp dessicated coconut
3 tbsp honey or corn syrup
3 tbsp brown sugar
3 tbsp corn oil
1/2 tsp vanilla
1/2 tsp salt
1/4 cup dried fruits (raisings, prunes, apricots, dried mangoes, etc)
1. Combine oats, wheat germ, cinnamon, sesame seeds, nuts and dessicated coconut in a bowl. Set aside.
2. Combine honey, corn oil, brown sugar, vanilla and cinnamon in a saucepan. Let boil. Add to oatmeal mixture. Mix quickly and completely.
3. Spread mixture on a baking tray and bake for 30 minutes at 350 F (Mix occasionally to prevent mixture from burning).
4. Let cool. Add dried fruits before putting in glass jars or airtight containers.
This granola cereal is great as munch-ons, snacks and as topping for ice cream, pies and other desserts. Always keep in airtight containers to keep in the crunch.
