Asparagus is in season so if you can steal a can of lager from the fridge, these turn out really light & tasty

Prep Time 5 mins
Cooking Time 7 mins
Ingredients

* 10 Fresh asparagus spears, washed, trimmed and cut into 2”/50mm lengths
* 4 oz/120g Self Raising flour, sieved
* 5-6fl oz/150-180ml Cold lager
* Olive oil for frying ( See Cook’s tips)

Ingredients for the dip

* ½ tsp Dried thyme
* Zest of 1 lemon
* ½ Tsp Lemon juice
* 120 ml Mayonnaise
* Salt and freshly ground pepper

Method

* Prepare the batter by mixing the cold lager and flour together
* Heat the olive oil in a large wok
* Dip the asparagus into the batter to coat and transfer to wok
* Fry for 5-6 minutes, turning over after 3-4 minutes to cook evenly

Method for the dip

* Make the dip by mixing the mayonnaise, thyme, lemon juice and zest together
* Season to taste
* Chill in refrigerator for 20 minutes

Cook's tips

* I used approx 200ml

* Grater
