I looove banana peppers on sandwiches. But, I'm looking for some unique ways to utilize them in more dinnerish dishes. Any suggestions?

I like this one. I use it in place of jalapeno poppers for my "milder" guests":
STUFFED BANANA PEPPERS
6 to 8 lg. banana peppers
1 lb. lean ground beef
2 eggs
1 onion, chopped
1 c. grated cheddar cheese
Salt
Pepper
Flour
Milk
Cut banana peppers in half and clean. Put aside until later. Mix meat, onions, cheese, salt and pepper together well. Stuff peppers with meat mixture. Set aside. Make egg and milk wash and dip stuffed peppers in wash and then in flour, then deep fry until meat is done and golden brown.
