I will be making this soon with all the fresh ingredients we are getting at the farmers market.
1 large eggplant, diced
3 cloves garlic, crushed
5 zucchini, diced
1 spring thyme
4 Basil leaves
1 teaspoon pepper
1 medium onion, chopped
3 large tomatoes, diced
1/2 cup oil
Methods/steps
Saute onions and garlic in oil until tender, add eggplant and zucchini and cook for 5 minutes stirring frequently. Add chopped peeled tomatoes, green pepper, salt, pepper, thyme and basil.
Cover and cook on low for 25 minutes or until juices are reduced.
