What did you bake recently that was just a pure disaster and came out so terrible?

Yesterday, I baked, or was intending to bake what I thought was going to be a very delicious lemony buttery-flavored a 7-Up Cake.

Everything seemed to go was as it usually does.

But during the baking process, the cake batter began running over to the floor in the oven from the tube pan!! This never happened before. I was devistated trying to figure out just what went so terribly wrong!!

All that butter, flour, eggs and sugar gone to friggen waste!!!. Later, I went back to get the flour because I was making a bechimel sauce for the Tuna Noodle Casserole.

That is when I noticed that I used the wrong flour for the cake!! It was the self-rising flour that I mistatakingly used!! The leavening ( baking soda & baking powder) already in the flour had caused the batter to overflow out of the pan, and the cake had ended up friggen falling and weighed a ton!!

I wasn't paying attention to the flour that I used, and it became a very costly mistake. In the 20-plus years that I've made this same cake with no problems at all, this is the very first time that I've EVER had a problem like this!!

When making this cake, it requires no leavening agents, as it rises on egg power alone to almost double its size in volume, just reaching the rim of the tube pan, but not running over.

Today, I just made the batter for another one, and it's in the oven now. I made sure that the right flour was used this time around.

This one should come out good like it has done years before. :D

It's interesting that you posted this disaster today. I was grocery shopping with my wife today, and while in the baking aisle she asked if I needed any flour, as one brand was on sale. I looked, and it was the store brand of SELF RISING flour. She does not bake much from scratch, so I let her know what self rising flour was about, and asked her to NEVER buy a bag, as it could be disastrous if it was mixed with my other flour (Montana Sapphire in 25# bags) used for yeast breads. I have five different flours that I use for baking, and each is in its own sealed container with the contents clearly written on the cover.

April was a baking month for me so I baked cakes, muffins and breads.
I agree not buying self raising flour. I don't see the point. It is just as easy to add your own raising agent as you need it.
I have been using strong bread flour for pides, buns and loafs and find that it is much nicer to use than ordinary flour.

Dough Boy;

Yeah, I posted it just before I learned about Heckabecca's unfortunate experience with the cookies.

Self-rising flour, which my mom used to buy when we were all home, and what I used to buy myself - can be used to bake things like biscuits and certain quick breads like cornbread.

But it can be disastrous for certain cakes and other stuff. I didn't even buy that one. I made it myself and was going to use it the next time that I bake biscuits. Instead of buying it, you CAN ,make it yourself if you want to.

Just keep it away from the other flours so that you don't make the same disastrous mistake that I made!

The 2nd cake 7-Up Cake that I made yesterday however, came out very delicious, golden brown, rich and luxuriously appointed, BTW!

I've posted the recipe for the 7-Up Cake in the Recipe Section for anyone who would like to try it. Enjoy!

I forgot to mention this other one!

About a month ago, I went to make and bake a loaf of whole wheat bread in the Zojirushi Bread Machine.

The dough just flat out friiggen refused to rise, and by the time the baking cycle begin, it didn't move much at all then, either!!!!!!!! Ended up having to toss the dough out!!

I strongly believe that the whole wheat flour was old, and so was the yeast even though it hadn't reached the expiration date yet.

Guess in baking, you have to have strictly fresh ingredients, or you won't get good results at all!!
