Hey there all,

First post here, so I figure I'd make it a good one and hopefully get a great idea or suggestion in return.

I make what has been received as a very good mashed baby red potato recipe which includes baby reds, naturally, green onion, garlic, butter and cream cheese.

This makes an excellent side, but I'm looking for the main portion of this plate. I immediately think chicken as honestly that's what I'm best cooking when it comes to meat.

Originally I was thinking of perhaps adding Parmesan cheese to the potatoes as a light dusting and perhaps an encrusted boneless breast of chicken, but was unsure how to go about it or even if it seemed like a good idea. What say you all?

WOW!! Your potatoes sound wonderful!! You asked what to serve with them. I would not serve crusted chicken as you mentioned. Instead I would serve baked or grilled chicken. I think crusted chicken is too "heavy" with the potatoes -- chicken marinated in lemon juice, garlic, rosemary, etc. and baked or grilled would add a freshness to your meal. I would also consider baked or grilled fish such as salmon. Have you ever tried a pork tenderloin roast? It would be good with your potatoes as would tiny loin lamb chops. Don't forget lots of fresh veggies and salads! Let us know what you try!! (You may want to try a sprinkle of chopped fresh parsley or basil over your potatoes --)

I think if some veggies like cabbage and green chilies are added to the mashed potatoes then it will be more delicious. and beef steak (http://www.recipedose.com/2009/03/grill-steak.html) would complement your mashed potatoes.

your potatoes sound really good! and the chicken idea I think would work great. Pound out the chicken and encrust with Parmesan cheese and saute. Nummy. would work great with your potatoes. you don't even have to use salt and pepper with this recipe. Just grated parmesan cheese, use as you would flour or bread crumbs and saute in a little olive oil. it's wonderful.

Great idea, pork loins and chops are perfect for accompanying mashed potatoes, especially if they're brined and nicely spiced. That'd be a great comfort-food dinner.
