well, there is tortilla pizzas, you can make them out of anything you have leftover. I like to use leftover taco meat and taco sauce in place of pizza sauce use mozzarella or jack cheese, after it comes out of the oven, top with shredded lettuce, diced tomatoes, sliced black olives, maybe some picante sauce. you can take chicken, leftover pork sliced thin and use barbecue sauce in place of pizza sauce. a great change and easy to make. I would be glad to send you any recipes you would like just email me at Semigourmet @ aol and let me know what you would like.

I like to make slow cooked pork shoulder in the Crock-pot. It virtually cooks itself and is very versatile. What I do is season it with salt, pepper and cumin and brown it well on all sides. I then place a layer of sliced yellow onions on the bottom of my pot, topped with thyme; 4 large, peeled and quartered carrots and 5 or 6 large, smashed garlic cloves. I place the pork on top and add red wine and beef broth. 6 hours later I have the most tender pork imaginable. We eat some that day and I then freeze the rest in batches. The kids love it when I mix it with barbecue sauce and feed them pulled pork barbecue sandwiches. I also thaw it and let it fry until crispy and serve it as carnitas. Or you can thaw it and place it in a skillet with some onion, cilantro and chopped tomato. Cook it for a few minutes and serve it on a tortilla as a taco or in a quesadilla. All kinds of possibilities with this delicious, tender pork!

Kids, especially little kids, like things simple. Their palates tend not to want a lot going on.
Here's some ideas:
Pierogis - They are pasta shells stuffed with cheesy potatoes. They come in the grocer's freezer. Just saute them up in butter for a different side dish. I like to serve them with sausage.
Pancakes - Sometimes for dinner you can fall back on breakfast. Make some pancakes with a fruit salad.
Nachos - Do you ever make nachos? Kids love this crunchy cheesy food. It's simple and affordable. Put on the chips what your family likes.
Hope this helps a little.

Something you might try:
CHILLI DOG CASSEROLE
1 pkg. (8) hot dog buns
1 pkg. (8) hot dogs (use more if you like)
1 can Chilli (15 oz. without beans, use more if you want)
1 small onion (chopped)
2 cups shredded cheese
mustard
DIRECTIONS: Pre-heat oven 350 degrees
In a 9" x 13" baking pan, break up hot dog buns (bite size) and spread in pan.
Cut up hot dogs (about 1/2" size) spread over buns.
Spoon/spread chilli over hot dog/buns.
Sprinkle onions over all.
Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)
Cover with shredded cheese.
Bake until cheese is melted and bubbly.
(Hint: If using extra hot dogs & chilli, don't add extra buns.)
"Corny Beanie Weenies."
Mix one large can of baked beans (seasoned with brown sugar, onion, and bacon).
1 package of Weiners (all sliced up).
1 can of whole kernel corn (drained)
Heat ingredients, and serve.
It doesn't get any easier than this, and is suprisingly good!
P.S…..Might put ingredients in a casserole dish and top with corn muffin mix....bake according to muffin mix direstions.
Desserts/Snacks:
Mock Ice Cream Sandwiches
2 whole graham crackers
Cool Whip
Spread a thin layer of Cool Whip on 1 whole cracker….top with remaining cracker….freeze.Can't get any simpler that that!! You'll want to make several at a time.....can't eat just one! HINT: Melt some chocolate and drizzle over top before freezing.
Kreamy Kool-Aid Pie
1-(6 g) package un sweetened Kool-Aid powdered drink mix
1-(14 oz.)can sweetened condensed milk
1-(8 oz)container Cool Whip frozen whipped topping, thawed.
1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)
Cool Whip for top (optional)
1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.
2. Fold in Cool Whip.
4. If desired, spread more Cool Whip on top.
5. Chill for a minimum of 4 hours
I’ve used: Strawberry…Cherry…Lemon-lime (Key-Lime Pie)….Lemonade (Lemon Pie…might add some yellow food coloring for a more lemony look.)

Magic Cookie Bars.
Made with melted butter on the bottom of a small baking pan, graham craker crumbs, chopped walnuts or pecans, chocolate drops, flaked or shredded coconut and sweetened condensed milk drizzled on top! Baked in the oven for about 20 minutes or so.
My dear brother who died loved this when he was a kid, his two boys like it and I'm just waiting to try it out with my older nephew's two boys!! They'll devour it also!
Kids will LOVE doing this recipe, I think! It requires no mixing bowls or spoons. Everything is layered right in the baking pan with no mixing at all!! Only one pan to clean.
