I want to cook an authentic and relatively easy mexican dish. Not Burrito, Enchilada, Fagita or Taco. I have done all that and am feeling that I am missing so much more. I want something else and less common. Any ideas?
You might want to check the web for mole. I have never made it, but have eaten it on many dishes in Mexico. A really marvelous addition to basic chicken enchiladas and I'm sure you'll find other ideas with your search.

You can try Guacamole. It is simple and has only three lines of cooking instructions.
Here it is:
Ingredients
* 2 ripe avocadoes, diced
* Juice of 1 to 2 limes, plus more if needed
* 1/4 cup finely diced red onion
* 1 clove garlic, smashed
* 1 plum tomato, seeds removed, finely diced
* 3 tablespoons fresh cilantro, finely chopped
* 2 teaspoons Asian chili paste (recommended: Sambal Oelek)
* Kosher salt
* Tortilla chips, for serving
Directions
Combine all ingredients. Taste for seasoning and adjust with additional salt and lime juice, if needed. Serve with tortilla chips.
